We all know that the worst part about cooking is having to clean up afterwards. So what if somebody told you that you could make a delicious chicken and rice dish using just one pan? This recipe is so quick, easy, and perfect for one of those busy days.
Here are the ingredients:
- Bite-sized chicken
- Chopped red onions
- Chopped garlic
- Chopped cilantro
- Lemon
- Half cup rice
- 2 Cups chicken stock
Heat some olive oil in a large pan on medium high heat. Place your chopped onions inside and cook for about 5 minutes. Add in the garlic and the chicken. Saute the chicken so that it becomes light brown.
Add in the rice and stir for about 2 minutes. Pour in 2 cups of chicken stock and let it come to a boil. Then reduce the heat to low, and put a lid on top. Let it simmer for about 20 minutes, or until the rice is fully cooked.
Squeeze lemon juice and sprinkle some cilantro to top it off. Add in some red chili peppers if you want to add a little spice to the dish!
