How do you feel about strawberry shortcake? For anyone who doesn’t know, strawberry shortcake is, as the name suggests, a shortbread cake that is topped with strawberries, juice and whipped cream. Though it may actually be heavy in terms of calories, it tastes relatively light and the flavor of the berries is what dominates. If your mouth is watering just thinking about a slice of strawberry shortcake, you’re going to love what we have in store for you today.

This recipe for strawberry cream cake takes all those flavors you love from strawberry shortcake and kicks them all up a level. We’re talking moist cake, ripe berries, cream cheese frosting and a whole lot of flavor—all in just one bowl.

Here’s what you need to get started:

  • 2 1/2 cups of all purpose flour
  • 2 cups of sugar
  • 1 cup of vegetable oil
  • 1 cup of strawberries, mashed and undrained
  • 1 cup of strawberries, sliced
  • 1/2 cup of milk
  • 4 eggs
  • 1 three-ounce box of strawberry jello mix
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1 can of cream cheese frosting
  • electric mixer

Here’s what you do:

1. First things first: preheat your oven to 350 degrees and make sure to grease up a nine-inch round baking pan. Once that’s done, get a large mixing bowl and throw in your flour, sugar, baking powder, baking soda and jello mix. Set your electric mixer on low and blend everything together.

2. Once everything in the bowl is combined, throw in your milk, oil and eggs and keep mixing it all up on low. Throw in your mashed strawberries and turn the mixing speed up to medium. Mix it all together for two minutes. Finally, fold in half of your sliced strawberries with a spatula or a big spoon.

3. After that, your batter should be all set! Pour it into your greased pan and throw it into the oven for about 35 to 40 minutes. When the time is up, you should be able to poke a toothpick into the middle and have it come out clean.

4. Take your cake and let it cool for about five minutes before turning it over onto a wire rack to get it out of the pan. Let it cool the rest of the way. Once it’s at a safe temperature, frost the entire cake with your cream cheese frosting and layer the rest of your sliced strawberries on it for decoration.

Although this fruity and delicious cake is a good option anytime, it might be particularly worth looking into for an Easter dessert! The recipe itself is quite easy to whip together, even if it’s a strawberry cake that you’re not used to. Once you’ve mastered this one, consider that this recipe would probably work just as well with raspberries or blueberries as well.

In any event, have fun with it and tell us how it turns out!
