Amy starts out by cracking half a dozen eggs good enough to feed 2 to 3 people. She notes that scrambling the eggs should be done before you even put them in the frying pan.

This way, you can make a pretty good scramble and not end up having eggs with a lot of egg white showing.

Beating the eggs well before frying them is one of the keys to cooking the fluffiest scrambled eggs. You would not want flat eggs on your breakfast table as they are not as appetizing as the fluffy ones. Beat the eggs well so that they get to have more air in them, resulting in a fluffier texture.

Another important thing to remember: cooking on low heat.

Cooking your eggs over high or medium heat will make them cook faster, making the eggs rubbery or flat. Once the fire is turned on low, you can now pour the well-beaten eggs on the frying pan. This is when you begin to stir the eggs. But wait, not too fast!

Instead of stirring right away, you need to wait for a few moments before actually starting to glide your spatula on the pan.

Let the eggs set for a bit before starting to gently fold the eggs.

Make sure to fold just right and let the liquid flow outward and towards the edges of the pan. Continue to fold until there’s no liquified part, and the eggs are fluffy. But, wait. What about the salt and pepper?

Amy says that the best time to add your salt and pepper is right after turning the egg to a plate. Now, the eggs are ready to be served!
