How do you feel about lemon meringue pie? Although most of us have probably enjoyed a slice of this delicious treat, we’ll explain for those who haven’t. Meringue is made from combining whipped eggs and sugar while the filling is made up of a rich and tart lemon filling. Still, making perfect meringue can be difficult and actually baking a lemon meringue pie can be a pain. Fortunately, we have an alternative option for you.
Today’s recipe is for an easy no-bake lemon icebox cake. It’s super simple to put together and will give you all the same flavors as the best lemon meringue pie. With spring now upon us and summer around the corner, this is an ideal recipe to have in your arsenal.
Here’s what you’ll need:
- 2 packages of lemon pudding mix
- 1 eight-ounce container of Cool Whip
- 3 cups of whole milk
- 1 16-ounce package of graham crackers
For the frosting:
- 1 stick of softened butter
- 2 cups of powdered sugar
- 2 tablespoons of milk
- 2 tablespoons of lemon juice
Here’s what you do:
1. To start things off, get a 9 x 13-inch pan with parchment paper or aluminum foil. Next, fill it with an even layer of graham crackers—be sure to break up the crackers wherever necessary to fill the cracks.
2. Get a large mixing bowl and throw in your pudding packets, Cool Whip and your milk. Combine it all together and then pour half of that mixture over your graham crackers.
3. With the filling in, put down another even layer of graham crackers on top and then throw in the rest of your pudding mixture the same way. Finally, top it all with one last layer of graham crackers when you’re done.
4. Now you’re ready to make your frosting! In another mixing bowl, throw in your butter, milk, lemon juice and sugar and stir well to combine. Start with just one cup of powdered sugar and keep adding more until the frosting gets to a consistency that you’re happy with.
5. Finally, spread your frosting evenly over your cake, cover it and freeze it for at least four hours (or overnight). Once it’s solidified and cold enough, take it out of the freezer and serve!
The good thing about this recipe is that it provides the blueprint for many no-bake varieties of other easy pie recipes. Although this one works particularly well, try experimenting with the flavors and ingredients to yield other easy pies as well once you get familiar with this one!
