You will need the following:
Crust:
- 14 delicious Oreo cookies
- 1/2 a cup (or 40 grams) of melted butter
Chocolate cream cheese filling:
- 1 1/3 cups (or 200 grams) of dark chocolate (55 % below)
- Hot water
- 2 1/2 cups (or 300 grams) of cream cheese
- 1 tablespoon vanilla extract
- 1/4 cup (or 40 grams) of sugar
- 3/4 cup (or 200 grams) of whipping cream
Dark chocolate glaze (optional):
- ~1/2 cup (or 100 grams) of whipping cream
- 2/3 cup (or 100 grams) of dark chocolate
How to create Niño’s chocolate cheesecake:
Step 1. To create the crust, get your Oreos and remove the cream. Put the cookies in a ziplock bag and crush them. The texture should be crushed but not powdery.
Step 2. Pour in the melted butter and seal the ziplock. Then mix it until it’s well combined.
Step 3. Prepare a flat and clean base, and then set your detachable mold. Pour your Oreo crust mix and lightly press it. Refrigerate it for 20 minutes.
Step 4. While waiting, get your 200 grams of dark chocolate and chop it into smaller pieces.
In a bowl, pour hot water, and then place the container with your dark chocolate. Mix until it melts. You could also microwave it.
Step 5. In a separate bowl, whisk room-temperature cream cheese. Then, add vanilla extract and sugar. Mix well.
Step 6. Mix the cream cheese and chocolate and set aside. In another bowl, pour in the 200 grams of whipping cream and whisk until you reach a soft peak.
Pour it into your chocolate mixture and fold.
Step 7. Get your crust and pour in the filling. Make sure that the filling is well distributed and compact. Refrigerate for four hours.
Step 8. You can already serve this, but if you want to make it extra special, pour 100 grams of whipping cream into a pot and bring it to a soft boil.
Then pour it on your chopped dark chocolate until it melts. Wait until it cools down, and then pour it over your cake.
Wait until the glaze sets, and that’s it. Ready to serve!
Here is a tip to keep in mind:
Don’t use dark chocolate more than 55% because the bitterness won’t go well with the slightly sour taste of the cream cheese.
Looks delicious?
