Desserts are tricky to make since most of them need more time to bake or chill in the fridge. Sometimes, you don’t have enough time to make them during spontaneous family dinners.
The solution? Make one ahead, so there’s always something at the ready. And if the dinner doesn’t push through, who says you can’t have that dessert by yourself, right?
This recipe has simple ingredients but needs a lot of precision to get a perfect consistency. You can prepare this ahead and leave it in the refrigerator, ready for tomorrow’s dessert.
The ingredients
- Digestive biscuits (at least 8 pieces)
- 2 cups milk
- ¼ cup all-purpose flour
- ¼ cup powdered milk
- ½ cup granulated sugar
- 1 tsp vanilla essence
- 1 ½ tbsp unsalted butter
- ½ cup whipped cream
- 2 tbsp powdered sugar
- Desiccated coconut (at least 3 tbsp)
- Chopped pistachio (at least 3 tbsp)
- Chopped almond (at least 3 tbsp)
Prepare these cookware
This recipe would require basic cookware such as mixing bowls, a saucepan, and a ceramic or glass pan to assemble your dessert.
You will also need a whisk, spatula, and beater if you have one available. If not, the whisk would work just the same.
Some important notes
This recipe relies a lot on whisking or mixing continuously and vigorously since a lot of the entire dish’s consistency depends on it.
Cooking and preparation
First, place a layer of digestive biscuits at the bottom of a glass pan. The size of the pan wasn’t indicated in this video, but this could be around eight to nine inches and about three inches deep. Set aside.
Pour the milk into the saucepan. Add the granulated sugar and all-purpose flour and whisk vigorously. This is very important because this prevents any lumps in your mixture. Else, you would not achieve the consistency and texture you want for this dessert.
Once the mixture is clear of lumps, add the powdered milk and mix well. Then, cook on low to medium flame.
You must continuously mix it while heating it, so it won’t lump up and burn. Do so until you have this thick, creamy consistency.
Add the butter and vanilla essence and continue to stir to a creamier consistency. Turn off the heat and quickly pour and spread in the pan on top of the digestives before it stiffens. Place another layer of digestive biscuits and pour the remaining cream.
Top that with desiccated coconut and some chopped almonds and pistachios. Make sure to leave some for later. Let it cool and set it aside.
In a mixing bowl, whisk together the whipped cream and powdered sugar. You can also use a beater to speed up the process. Do this until you have a thick and fluffy consistency.
Take out the pan and place the whipped mixture on top. Then, sprinkle the remaining desiccated coconut and chopped nuts on top.
Place it inside the refrigerator for at least three hours, but it’s best if you leave it overnight. Slice and serve this delicious dessert that your family would surely love.
