For the dough you will need the following ingredients:

  • 3 eggs
  • 200 grams of flour
  • 1 teaspoon of vanilla baking powder
  • 60 grams of powdered sugar
  • 60 grams of grated cold butter

And for the cake’s filling, you will need:

  • 400 grams of sour cream
  • 200 grams of yogurt
  • salt
  • 150 grams of sugar
  • 30 grams of starch

Once you have gathered all the ingredients, let’s begin.

Step 1: Our first task involves the eggs. Begin by separating the egg yolk from the egg white and place them in separate bowls. Set them aside for future use.

Step 2: Now, let’s move on to the dough. Take a large mixing bowl and combine 200 grams or 1 cup of flour, 1 teaspoon of baking powder, and 60 grams of powdered sugar. Whisk these ingredients together thoroughly.

Next, add 60 grams of grated cold butter to the mixture and blend everything together.

Step 3: Incorporate the egg yolks into the mixture and knead until the dough reaches the desired texture.

Once complete, divide the dough into three equal portions.

Take one portion, place it in a plastic bag, and allow it to cool in the refrigerator.

Step 4: Get a 20cm baking pan ready and line it with parchment paper. Evenly distribute the remaining dough over the prepared pan. Set it aside for future use.

Step 5: Let’s now prepare the delectable filling for the cake. Take a separate mixing bowl and combine 400 grams or 2 cups of sour cream, 200 grams of yogurt, 75 grams of sugar, and 30 grams of starch.

Whisk these ingredients together thoroughly, ensuring there are no lumps in the mixture.

Step 6: Grab another mixing bowl and place the egg whites in it. Add a pinch of salt, then use a handheld mixer to blend everything.

While mixing, gradually add the remaining sugar, ensuring the mixture becomes frothy.

To check if it’s ready, hold the bowl upside down.

If the mixture doesn’t fall, you’re good to go!

Step 7: Slowly add the yogurt mixture to the egg-white mixture, while whisking to ensure a thorough mix.

Step 8: Pour this combined mixture into the baking pan containing the prepared dough. Retrieve the chilled dough from the refrigerator and tear it into pieces with your hands, then evenly spread them on top of the mixture.

Step 9: Place the pan in the oven and bake at a temperature of 350°F for 40 to 50 minutes, or until the cake turns a beautiful golden brown.

Don’t worry if the cake rises during baking, as it will settle down naturally.
