Start by adding 1 can (400 gm) of sweetened condensed milk to a small saucepan.
Next, slowly stir in four tablespoons of cocoa powder.
The mixture will start to resemble a silky chocolate sauce.
Mixing the cocoa powder into the sweetened condensed milk is also very soothing….but don’t get too relaxed…chocolate fudge awaits.
When the mixture starts to look like pudding, it’s time to heat things up.
It’s ok to want to taste (or devour) the fudge at this point…we won’t judge.
Bring the mixture to a boil over medium heat.
Stirring constantly, add the 30 grams of butter to the cocoa mixture, giving it a glossy sheen. Be sure to keep stirring the chocolate as it will burn easily. Again, tasting it wouldn’t be a crazy notion at this point. You will want to mix this for about 10 minutes until it thickens.
Time to form the truffles.
Once the ingredients are combined, pour the mixture into a small glass dish that is lined with plastic wrap. Press the mix into the dish with a spoon or spatula. Next, fold the plastic wrap back over the top of the truffle mixture (a.k.a. ganache).
Place the chocolate ganache in the fridge for ~1 to 1.5 hours and try your best to be patient.
After the very long wait, lift the plastic wrap out of the dish and place the cold ganache on a cutting board or plate. Discard the plastic wrap, sit back, and admire the dessert for just a moment.
Then, grab a sharp knife and cut even rectangles.
Cut the rectangles into small squares- perfect for sharing, if that’s what you want to do. Again, no judging.
If you want a more classic, round truffle shape, simply roll each piece into a ball.
Sprinkle the shaped ganache with cocoa powder to finish it off.
Store your truffles in the refrigerator, assuming you can make it last that long.
