Ramen noodles have come a long way in the West in the last decade.
Not long ago, our idea of ramen involved packets or cups of microwavable noodles with dehydrated vegetables and unidentifiable powdered flavoring.
These days, the iconic Japanese noodle has a genuine fan base.
Ramen for breakfast?
For those of us who have lived at least a few years at or below the poverty line, Ramen can easily be seen as breakfast, lunch, or dinner.
But typically, we don’t think of noodles as a breakfast food.
That is until we saw this recipe from Gesundes Essen von Nata, which is actually a German YouTube recipe channel!
While it appears to be a Japanese recipe at first glance, this easy and delicious breakfast has a German twist.
We were a little surprised when we started to see cheese being shredded.
Even more unexpected is that this is a dish you need a knife and fork to eat – a ramen omelet, so to speak. (Or as one YouTube commenter called it a “Ramen Pizza Cake Pie Casserole Pancake Lasagna”!

Not only is this omelet great in its original form, but there are plenty of things you can add to it to make the perfect breakfast for you.
Ingredients
Ok, so you’re probably wondering what you’ll need to make this dish.
Gather the following (these measurements aren’t exact but estimated from the visuals in the video):
- 2 blocks of instant noodles
- 2 eggs
- 1/4 cup of soy sauce
- 1 tablespoon of apple cider vinegar
- 1 teaspoon of paprika
- Olive oil
- 1/4 cup of shredded white cheddar cheese
- Sliced salami
- Spring onion, chopped at a diagonal
- Pinch of sesame seeds
Instructions
All you need in terms of equipment is a deep pot and colander, a large bowl, and a frying pan.
1. Using a large bowl or a pot with a colander nestled inside, add noodles and enough hot water to cover them. If your water is very hot, you will only need to soak them for about 3 minutes before they start to soften. (You can also use cold water, but extend the soaking time to 15 minutes.)
2. Drain the noodles once they’re softened and set aside.
3. Combine two eggs, soy sauce, apple cider vinegar, paprika, and olive oil in a large bowl and whisk together the ingredients.
4. Next, add the softened noodles to the mixture and stir to cover the noodles completely.
You can use your hands or a fork.
5. Heat a non-stick pan on medium and pour in the noodle mixture, being sure to cover the pan’s surface evenly.
6. Now, cover the pan and cook for 2-3 minutes. The eggs will act as a biding agent to turn the mixture into a solid “pancake.”
7. While the noodles cook, shred your cheese and slice the salami.
8. Use a spatula to flip over the noodles in the pan to cook them evenly on both sides.
9. Cover the noodles with your salami slices and shredded cheese as the second side cooks.
10. Cover the pan to cook until the cheese melts and begins to bubble. This should only take a few minutes.
11. As you wait, slice the spring onions diagonally. Depending on your taste preferences, you can use both the white and green parts as a topping.
12. Sprinkle sesame seeds on top of the dish.
13. Slide the pancake out of the pan and onto a plate.
14. Cut into quarters and enjoy!
