It’s a perfect omelette by a man named Mike.
Sure, anyone can make an omelette. But to be honest, no one knows how good yours is. And if you ask them, chances are they’ll say it’s good or delicious or something of the sort.
But let’s check out Mike’s perfect omelette.
You will need:
- 3 eggs
- salt
- pepper
- cheddar cheese
- Gruyere cheese
- Swiss cheese
- butter
- extra virgin olive oil
Mike starts by cracking three of his large organic eggs into a bowl. And there’s actually a few different ways of cracking an egg into a bowl so don’t sweat it so long as you don’t make a mess.
He then cracks some salt and pepper in the bowl. Some call it a pinch, but go do what makes you feel happy.
Beat the eggs.
“The key is really giving them a good mix.” says Mike.
Heat up a nice pan, not too hot, with some butter and extra virgin olive oil. Stir the butter and oil around. You want them to coat the entire surface of the pan. If they sizzle too much, lower the heat.
Pour in the three eggs you’ve just mixed with salt and pepper.
Then, Mike says, you just have to wait. It’s a lot of waiting so maybe sing your favorite song or something.
Watch the sides cook. Some people push and fold in the eggs while it sits on the pan but Mike leaves it alone for about two to three minutes. The eggs sit, so grab a seat too.

The sides will cook and you will see bubbles in the middle. Mike covers those bubbles by moving some of the liquid on top towards a bubble he bursts using a spatula.
You can add salt and pepper if you feel like you need more of a kick.
By the two minute mark, the egg should have a cooked base that moves around easily. Move the pan around if you need to distribute the heat.
At the three minute mark, he adds cheese down the center of the egg. A straight line of cheese down the middle. Add anything else you’d like too. Vegetables, more cheese, even some meat if you’d like.
Mike flips the egg one third in, then completely folds it over using the side of the pan as support. Go ahead and use a spoon or even your hand if you’re not too sure about flipping the egg.
Now all you have to do is to slide it on or push it on a plate.
Eat your omelette alone as it is, with toast or rice, then down it with a drink of your choice. It does look good served with just cheese but imagine strips of bacon or beef down the middle.
