“I’ll be whipping up a simple, one-pot dish that is perfect for any weeknight dinner. The variations are virtually endless. You can make it with the ingredients that you already have on hand. No need for a shopping trip in a specialty food store. This is the kind of meal that I grew up on, and I raised my 4 kids on.” – Hillbilly Kitchen
This simple recipe starts with browning 1 lb of lean ground beef with 1 cup of chopped onion.
The Hillbilly Kitchen chef adds a green bell pepper and salt and pepper to taste. The pepper is optional of course or can be substituted for any vegetable that you prefer.
You may see your family start to hover around the kitchen at this point.
Next, add 4 cups of diced potatoes to the skillet and mix.
Pour about a cup of milk on top of the mixture and put the lid on for about 15 minutes.
Add about a teaspoon of corn starch to the milk before you pour it over the meat and onion. The corn starch will help to thicken the liquid as will the potatoes.
Choose your cheese of choice and spread it on top of the mixture.
In the video, the chef uses provolone cheese. This recipe is very versatile so you can really make it your own.
If you have an oven-proof skillet, place it directly into the oven to brown the top.
When the casserole is finished you will see gloriously browned cheese and bubbling sauce.
The Hillbilly Kitchen proves that deliciousness doesn’t have to be complicated.
Sometimes the simplest ingredients make the best meals.
This timeless recipe will without a doubt be in your regular rotation.
“You can stick it in the oven and bake it kind of slow on a cold winter day…it smells wonderful. And the smell absolutely fills the whole house. All you need to go with it is maybe a slice of bread and some fresh vegetable or fruit….give this a try and make this your own thing.” – The Hillbilly Kitchen
