The recipe is divided into 2 parts- the pudding or the delectable icing on top and the cake itself. Here are the ingredients you need:
For the pudding:
- 1 egg
- 50 grams of sugar
- Pinch of salt
- 20 grams of starch
- 1 lemon
- 200 ml of milk
- 25 grams of butter
For the cake:
- 3 eggs
- 150 grams of sugar
- 10 grams of vanilla sugar
- 50 grams of sour cream
- 150 ml vegetable oil
- 250 grams of flour
- 15 grams of baking powder
- Powdered or confectioner’s sugar
Let’s start with the pudding.
In a small bowl or saucepan, crack an egg and add your sugar and a pinch of salt to bring out the flavors.
Mix them together with 20 grams of cornstarch to help bind all the ingredients.
Now, this is a key step – using a microplane, carefully shave off the zest of one lemon. This is the yellow surface part of the fruit’s skin.
Be careful not to shave off the rind because this can leave a hint of a bitter taste.
It’s time to enhance the flavors.
Add your milk then slice your lemon in half. Using a juicer, extract as much lemon juice as you can, and be sure to leave out the seeds.
Add the juice and stir well. Put your saucepan over low heat.
Keep stirring until the mixture slowly thickens. When you reach your desired consistency, take it off the heat then add 25 grams of butter. Set aside.
This is a good time to get a cookie and dip it in. We highly recommend that you not. Keep it together!
Next, let’s make the cake.
In a large mixing bowl, crack 3 eggs, 150 grams of sugar, and 10 grams of vanilla sugar.
You can use vanilla extract here too if you don’t have vanilla sugar. Mix your ingredients until they’re fully incorporated.
Add 150 ml of vegetable oil and 50g of sour cream.
Yes, it may sound strange but it will all come together later on.
Add your flour and baking powder. Then, squeeze the juice of the remaining half of your lemon.
In a deep baking pan, pour your batter and shake it a bit to help it settle evenly. Once well-shaped, pipe the pudding over your cake in whatever pattern you desire.
Bake your cake at 180 degrees Celsius for 40 minutes.
Your kitchen will smell amazing! Once done, take the cake out of the oven and let it cool before dusting some powdered sugar on top.
You can add some chopped almonds if you wish.
Cut into squares and serve! A simple but satisfying dessert indeed!
