These Homemade Lemon Bars Are So Delicious

Some dessert recipes pop up way more frequently than others do. On birthdays and other celebrations, it’s customary to have a slice of cake. When we’re at home and we want to do a fun baking activity with our kids, we probably get together to bake chocolate chip cookies. As a result of this, sometimes we can end up making a lot of the same dishes over and over again instead of branching out and exploring new things. The recipe we have today isn’t necessarily one you’ve never had before, but it’s definitely a dessert that is consistently underrated.

Today, we’re bringing you a fruity dessert dish that is something of a cousin to brownies. That’s right, we’re talking about lemon bars. Still, these aren’t just any lemon bars. These are definitely not the lemon bars you might make out of an instant box. These are a delicious and perfect homemade version that will take you right back to your childhood. If you haven’t had these in a while, now is a perfect time to jump back in. So let’s get started.

Here’s what you’ll need:

Crust:

  • 1 cup of room temperature butter
  • 1/2 cup of white sugar
  • 2 cups of all-purpose flour

Filling:

  • 4 room temperature eggs
  • 1 1/2 cups of white sugar
  • 1/4 cup of flour
  • 2/3 cup of fresh squeezed lemon juice

Here’s what to do:

1. To start, make sure your oven is preheating to 350 degrees. Once you’ve set it, get out a bowl and add your softened butter, flour and 1/2 cup of sugar. Combine everything together with your hands or a fork—you can also use a pastry cutter if you have one handy. When it all starts to combine into a rough dough, press it all into the bottom of a 9×13 inch pan lined with foil.

2. Next, put the pie tin in the oven and let it bake for 15 to 20 minutes until it turns brown and golden. In the meantime, get another bowl and whisk together 1 1/2 cups of sugar along with 1/4 cup of flour. Crack your eggs in another side bowl before gradually whisking them into the dry mix as well. Add in your lemon juice, stir everything up well to combine and pour the filling into the pie crust.

3. When the oven is hot enough, put the baking dish back in and let it cook for another 20 minutes uncovered. When it’s done, take it out and let it cool in the fridge for at least two hours.

4. Once the lemon bars are finally set, take the dish out of the fridge and cut it into squares. Top it all off with some powdered sugar if you’d like and serve!

As with all the best recipes, this one is very straightforward to make and results in some truly delicious dessert bars. The lemony flavor mixes perfectly with the sweetness for a tart and refreshing snack that is sure to be completely eaten up by party guests at your next backyard cookout.
