Rice is a staple in Asian cuisine. There are so many different varieties and thousands of recipes for rice depending on which Asian country you find yourself in. Here’s a recipe you can follow.
Xiaoying Cuisine is from Hong Kong and shares incredible recipes for viewers to follow and try at home. For this recipe, she claims it’s a “lazy way” of preparing this dish.
You will need:
- rice
- potatoes
- carrots
- mushrooms
- pork belly
- cooking oil
- rock sugar
- ginger
- grass fruit
- star anise
- cinnamon
- corn kernels
- green beans
- dark soy sauce
- light soy sauce
- Oyster sauce
- pepper
- salt
- egg
Wash the rice to remove impurities. You can do it her way or by running the rice under steady water, sifting through as you go along.
Soak the rice for half an hour. Grab those potatoes and cut them into small cubes. Take your time and be gentle with them. Soak the potatoes in water to avoid oxidation.
Cut the carrots into cubes as well. Set them aside on a small bowl or plate for later. Take the mushrooms and cut those up into cubes. You can see where this is going. Set the mushrooms aside for later use as well.
Cut the pork belly into smaller pieces as shown then set them on a bowl or plate beside the carrots and mushrooms.
You want to be organized in the kitchen after all.
Heat up some oil in a pan then add in the sugar until it dissolves. Add in the pork and mix evenly. The meat should be well coated with the sugar oil blend. Let the pork fat ooze out naturally. Flavor!
Throw in the ginger, star anise, nut meg, and cinnamon then mix them into the meat. Take the potatoes, carrots, and mushrooms you’ve chopped into cubes and add them in the pan.
Stir the ingredients together then take the corn kernels and green beans and toss them in.
Add a teaspoon of dark soy sauce, light soy sauce, and oyster sauce then sprinkle with salt and pepper. Stir them all together and make sure the ingredients spread out evenly.
Add water and bring it to a boil.
Pour the ingredients into a rice cooker then add the rice plus three eggs. Let the rice cooker do its job and once it’s done, let it sit for another ten minutes. Lift the lid and take a whiff!
Stir the rice mix gently and get all that heat in and around the cooked ingredients.
Scoop some into a bowl before covering the bowl with a plate. Flip upside down so the rice sits on the plate. Sprinkle sesame seeds on top for plating and presentation purposes.
