He originally started making low-carb recipes to help himself lose weight but he decided to share these recipes with the entire low-carb keto community.

It’s a good way to satisfy the sweet tooth but without all the guilt that comes with it.
Ingredients
- Salted Butter
- Pure Vanilla Extract
- Eggs
- Lemons
- Blanched Almond Flour
- Confectioners Swerve
The Recipe
Lemon squares are made of two layers, the chewy crusty bottom and the sweet, tangy, zesty fudge on top. While these are two different parts, these simples steps can help you do these at the same time.
Crust
1. Melt three tablespoons (42g) of butter in the microwave for 20 seconds.
2. Add an egg yolk and add half a teaspoon of vanilla extract, then whisk until they combine.


3. Add just less than a cup (100g) of almond flour and three tablespoons of confectionaries swerve.


4. Using a spatula, mix your ingredients together until crumbly.
5. Line an 8×8 baking dish with parchment paper then coat the surface with baking spray. Add the crust mixture.
6. Press the crust evenly on the bottom of the dish.


7. Pop it in the oven to par-cook the crust for around 10 minutes at 350°F.
Filling
1. Combine the eggs and the juice of three medium-sized lemons.


2. Using a mircoplane, grate the lemon zest and add it into the mixture.


3. Whisk the ingredients together then add 2/3 cups of confectioners swerve and less than a cup (105g) of almond flour.
4. Using a spatula, mix the ingredients together until you make a thick wet batter.
Lemon Squares
1. Once the crust finishes par-cooking, take it out of the oven to let it cool down for a few minutes.
2. Add the batter over the crust then bake it for another 25 minutes.


3. Once the golden crispy edges are just starting to pull away from the paper, you can take the lemon square out of the oven to let it cool down.
4. Chill the lemon square in the fridge for at least an hour.
5. After chilling, dust some confectioners swerve over the squares. You can use a metal sifter to evenly dust the surface.


6. Cut the lemon squares into 9 servings.
It’s delicious, it’s easy, it’s guilt-free. These lemon squares will definitely become the talk of the party because of the taste and the net carbs.
