Ribs are one of the best guilty pleasure foods that the world has to offer. If you’ve ever had them at a really outstanding barbecue restaurant, you know exactly what we’re talking about. The meat is crispy on the outside while still being fall-off-the-bone tender, they’re smothered in delicious sauce and the overall taste is so rich and satisfying. If you like to be hands-on when you’re eating your food, ribs are a dream come true. Still, we probably don’t eat ribs all that often because we can’t always break out the grill to do so.

But what if we told you there was an easier way to make delicious ribs without needing all that extra equipment? As it turns out, there is. You may have tried out some slow cooker ribs recipes in the past, but this instant pot recipe for baby back ribs takes that approach to a whole new level. In addition to getting the meat just as tender as it would otherwise, it also adds a nice outer layer of crispiness and char that’s just as good as if it were done on a grill. So what are we waiting for? Let’s get started.

Here’s what you’ll need:

  • 1 rack of baby back pork ribs
  • 1/4 cup of brown sugar
  • 2 tablespoons of chili powder
  • 2 teaspoons of dried parsley
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 teaspoon of cumin
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1/4 teaspoon of cayenne pepper
  • 1 cup of water
  • 1/2 cup of apple cider vinegar
  • 1/4 teaspoon of liquid smoke
  • 1/2 cup of barbecue sauce

Here’s what you do:

1. Before you get started, take out your ribs and peel off the lining from the bottom side by running a butter knife along them under the skin. Once it’s loosened, use a paper towel to pull it off completely.

2. Next, get a bowl and combine your brown sugar, chili powder, parsley, salt, pepper, cumin, garlic powder, onion powder and cayenne pepper. Mix it all together so it’s evenly incorporated before massaging the dry rub all over your ribs.

3. When they’re ready, drop the pork ribs into your pressure cooker standing on their side, wrapping them up in a coil so that they fit completely. Pour in your water, apple cider vinegar and liquid smoke as well (though be careful not to rinse the seasoning off your ribs in the process).

4. After that, set the lid back on the instant pot and make sure the vent is closed. Set the thing to cook on the Meat setting for 25 minutes. Let the pressure release on its own for 10 minutes before doing quick release to let it cook the rest of the way.

5. Finally, take the lid off the ribs when they’re done and roll them out onto a foil-lined baking sheet. Brush them with a barbecue sauce of your choice and slide the tray in the broiler for about five minutes. Once it’s done, you’re ready to eat!

The result is some perfectly flavored, tender and crispy ribs that you can serve up at your next backyard cookout. Though the recipe above ie reliable, you can also double the dosage by doubling all the ingredients while keeping the liquid ingredients the same.
