Ingredients to prepare:
2 beef steaks, with a thickness of 1-inch minimum
½ tsp white pepper
2 tsp olive oil
½ tsp black pepper
1 tsp salt
2 tsp butter, softened
1-2 cloves garlic, minced
(Optional) herbs like sage, rosemary, or thyme
(Optional) use an oven-safe skillet
Rachel’s recommendation regarding steaks:
Rachel says, to get that juicier and more tender result, thicker steaks must be used. Going for thinner steaks will cook faster and can quickly become overcooked or will easily dry out. In her video, she used the New York strip steaks, which are preferred for being big and juicy. It is better to get the same to have the same result as hers. She also recommends looking for prime cuts, and you can get those with fat on the sides if you want.
Now, it is time to get to the process!
1. Get the steaks ready
Thaw your steaks if you have stored them in there for a few hours and remove their packaging. Allow them to have the room temperature and just let them sit for half an hour. You can then start preheating your oven to 375 degrees.
2. Cover your steaks in oil
Put an adequate amount of olive oil and rub it all over the steaks, even on the fatty sides.
3. Rub the mixture of seasoning
Combine salt, onion powder, and pepper in a tiny container. And evenly rub this mixture in all faces and sides of the steaks.
4. Heat the skillet
Make your skillet “smoking hot,” as Rachel says. When your skillet is in the right hotness, sear the steaks for about 2 to 3 minutes, each side. There is no need to put butter or oil in your pan.
Make sure that you cook the sides!
Do not forget the fatty sides of the steaks. The term for this is rendering. You would want the fatty sides to render out to avoid chewing portions of fat. Cook the sides for 2 to 3 minutes as well.
5. Put in the oven
Place your oven-safe skillet with the steaks inside the preheated oven. It is okay if you don’t have a skillet like this. Just transfer the steaks to the oven-safe tray. But, it is best that you have the steaks on the pan where you seared them. What Rachel suggests is 5 minutes per inch regarding the cooking preference when you want to have a medium-rare steak.
6. Mix garlic and butter
Simply combine these two in a small bowl and add a pinch of herb that you love to get that extra flavor. You’re cooking like a pro now!
7. Take the steaks out of the oven
Remove the steaks about 5 degrees before they reached your desired temperature. If you want medium rare, then your thermometer should read 135 degrees. Once you remove them, the temperature will continue to increase by about 5 degrees.
8. Put the garlic butter on top
Place your steaks in the serving dish and top it with garlic butter. Allow your steaks to sit for 10 minutes, giving them time to absorb their juices and become tender. This is an easy step, but with the irresistible aroma, it’s pretty hard to do. To taste that perfect steak, then you have to hold your horses.
The time has now come for you to take delight in your juicy and tender steaks!
You may add other spices that you like. Put mustard powder, paprika, cayenne pepper, or other favorite spices. But, Rachel’s recipe won’t disappoint you.
