Cabbage has suffered the reputation of being one of the most boring vegetables out there. If asked what you can do with it, the most common answers are sauerkraut or coleslaw.

But there are so many recipes that use this big bulb of leaves. They can be used in stews and soups, and they can even be baked into this unbelievably hearty dish.

According to Ayşegül from Taste from the Village, here are the ingredients you need:

1 kilogram of cabbage

3 potatoes

1 onion

2 green peppers

200 grams of minced meat

2 tablespoons of oil

1 tablespoon of tomato paste

250 ml of hot water

1 teaspoon salt

Chili pepper

Black pepper

You also need the ingredients for the béchamel sauce:

1 tablespoon of butter

2 tablespoons of oil

2 tablespoons of flour

2 cloves of garlic

3 glasses of milk (600 ml)

1 teaspoon of salt

1 teaspoon of black pepper

100 grams of cheddar cheese

First, let’s prepare the cabbage.

Using a sharp and pointy knife, carve out the stem on the underside of the cabbage.

Set the cabbage down with the carved part on the table. Slice the cabbage down into strips about an inch wide. Don’t cut the whole way down for easier handling.

Make another set of cuts but perpendicular to your first cuts.

Carefully tear off the cabbage leaves you’ve cut into 1-inch squares.

Dice the potatoes, onions, and green peppers.

In a pan, cook the minced meat with the oil. Add the potatoes, onions, and green peppers. Stir until the vegetables are tender.

Add in the cabbage and combine the ingredients well. Add your tomato paste, salt, chili, and black pepper.

Add the water and let it simmer.

In the meantime, let’s prepare the béchamel sauce.

In a saucepan, melt some oil and butter. Stir in your flour and keep on stirring to avoid burning the roux.

When the mixture becomes thick and bubbly, add your garlic. Then, add your milk slowly while you stir continuously.

This will take some time but once you end up with a porridge-like sauce, add your salt and pepper.

Finally, let’s arrange your ingredients in a baking pan.

Transfer your cooked meat and cabbage to the pan. Stir them around so they would be evenly disturbed in the pan.

Next, add the béchamel sauce on top. Using a spatula, flatten and spread the sauce evenly over the cabbage stir-fry.

Top with cheddar cheese to add to the goodness. Make sure to cover the surface.

Bake in the oven for 200C until golden brown and toasty.

You’ll never eat cabbage the same way again after this recipe.
