Although there are many “flashy”, or “fancy” things one can do with a potato, it’s often the simpler methods of preparation that offer the most rewarding results. Forget duck confit or rosemary fondant, sometimes it’s the humble mash that absolutely knocks it out of the park.

The best thing about mash is how creative you can get.

There’s literally no limit to the boundaries of mashed potato preparation. You can infuse your mashed potato with herbs or spices, use it as a topping, or even top it with something else to really elevate a tasty dish.

YouTube cooking channel, “Lieblingsrezepte” is known for incredibly creative meals and ingenious recipes. In one video, chef Sophie shows us a delicious recipe involving a loaded mashed potato, just like Granny used to make.

This beef-topped mash pocket is absolutely to die for!

Here’s what you’ll need:

  • 2 lbs of potatoes
  • 16 oz of minced beef
  • butter
  • vegetable oil
  • dill
  • salt, paprika, pepper, garlic powder
  • 1x onion
  • 14 oz of diced tomatoes
  • 3.5 oz of Manchego cheese

First step: get chopping!

Before you do anything, preheat your oven to 400°F. Next, chop your potatoes into 1/2 inch cubes.

Bubble bubble, toil and…potatoes.

Drop a healthy pinch of salt in a pot of water and bring to boil. Put the chopped potatoes in and reduce heat to medium-low. Cover loosely and boil steadily for 15-20 minutes.

Get the goggle out, it’s onion time.

Carefully, dice your onion finely. Anyone who’s ever done this will know: get ready to weep…unless you’ve got some goggles handy.

It’s fry time.

Drizzle some oil in a pan and place over medium-high heat. Drop your diced onion into the pan and sautee until soft. Then, throw your ground beef into the pan. Fry for approximately 10 mins, stirring regularly. Make sure to break up the ground beef.

Here comes the flavour.

Once your beef is nicely browned, add tsp of salt, garlic powder paprika, and black pepper. Then, without further ado, add your diced tomatoes.

What’s the dill with that?

Finely chop the fresh dill. Be careful, this is intricate work, and could easily turn into a painful cut.

Mash them taters.

Remove potatoes, strain, and place in a bowl. Then, add butter, and your chopped dill and proceed to mash them taters.

Next fun step: Coat your hands in olive oil, and use them to form mashed-potato balls, just smaller than a fist. Carefully place the balls into the bottom of a baking dish.

Another fun step: Press a glass or small flat bottomed item into the potatoes. The point of this is to create a “well” for our meat topping.

Fill’em up!

Place a hefty pinch of finely grated manchego cheese into each well. Next, carefully place a decent portion of your beef mix, then top with some more grated manchego.

Baking time!

Bake your potato delights at 400 for 10 mins, or until cheese is melted. Then, you’re ready to unleash these delicious delights on your eagerly awaiting family and friends.
