The ultimate comfort meal: Cheesy, fully loaded baked potato casserole

When you’re down, sometimes, you just need a loaded baked potato with all the toppings you could wish for.

But what if you can upgrade your loaded baked potato into an amazing casserole side dish?

Ingredients:

6 Slices of Streaky Bacon

2 kilos of Potatoes

Olive Oil

Salt and Pepper to taste

600 ml of Sour Cream

4 cups of Grated Cheddar Cheese or any cheese you like

Let’s start by cleaning your potatoes by scrubbing them. Make sure all those dirt will be washed away. Dry them and set them aside.

Chop up your bacon and then heat your pan and cook them. You don’t have to cook them until they are all super crispy, you just need to cook them until they have rendered some fat.

Stir occasionally while cooking. Then, transfer them into a plate lined with absorbent paper towels to remove the excess bacon grease. Set aside.

Let’s go back to our potatoes.

Since we’ll bake our potatoes, we want to line them on a baking tray with parchment paper.

Using a fork, you need to prick your potatoes, just enough so that there’s a way for the steam to be released.

Get some olive oil, drizzle and massage it all over your potatoes. Season with salt and pepper.

Once you are done, place it in your pre-heated oven at 200°C for about 40-45 minutes.

After baking, you’ll notice the beautiful skin of your potatoes. Let it cool down a bit and chop it into bite-size pieces.

Now, we’ll assemble this yummy side dish.

Grease your oven-safe large baking dish and layer half of your chopped potatoes.

Next, spread that creamy sour cream, and sprinkle half of the bacon and cheese.

Repeat the steps and add half of the potatoes. Compress and add the sour cream, bacon, and cheese.

Looking good, right?

Bake for about 30 to 35 minutes in a preheated oven of 180°C or until your cheese has melted.

Serve as a dish to your favorite BBQ meats, roasted chicken, and steak. Or you can eat it as comfort food.

  • You can use any cheese you want, don’t be afraid.
  • Don’t remove the potato skin. It has the flavor and is deliciously crispy.
  • If you want to add a little kick to your sour cream and drizzle some sweet chili sauce.
  • If you won’t cook this yet, you can store it in the fridge and just cover it with cling wrap. It will be good for another 24 hours.
  • This is the basic recipe, but like any loaded baked potato, you can add other ingredients according to your liking.
