Ingredients:
For tortilla wrap:
- 1 corn tortilla
- 1 egg
- 1 cup cheese (preferably cheddar)
- 4 cherry tomatoes (or 1 medium tomato)
- Feta cheese
- 4 olives
- Fresh basil
For salad:
- 2 cucumbers
- 2 sprigs of spring onions
- 1 ripe avocado
- 2 tbsp. lemon juice
- 1/8 tsp. red pepper flakes
- Salt
Directions:
- Beat the egg in a bowl and grate the cheese. Set aside.
- Moisten tortilla wrap by soaking it in cold water and place it in a pan over low heat.
- Pour half of the beaten egg on top of the tortilla and brush or spread all over the tortilla.
- Sprinkle half of the grated cheese and cook for one minute.
- After a minute, flip the tortilla to the other side and do the same thing with the remaining egg and cheese.
