Eggs are really good for you.
Even athletes swear by them. And with breakfast being the first and most important meal of the day, you might as well make it special.
So here’s a new take on eggs and toast.
You will need the following ingredients.
- 2 slices of bread
- butter
- scallion
- 2 eggs
- 2 slices of bacon
- parmesan cheese (optional)
- Cream cheese
- 1 cucumber
You can find all of these at your local grocery.
Take the bread and cut around the inner part, removing a whole piece then set them aside.
You’ll need the hollow pieces of bread later. Melt the butter in a pan, making sure the entire surface is coated as it melts.
Fry the bread for 2 to 3 minutes on the melted butter. Make sure both sides are coated with that golden brown color. Set the bread aside.
Spread cream cheese on the bread. It’s good stuff.
Peel the cucumber and do be careful with your fingers.
Lay strips of the cucumber on the bread then cut up the scallion in to small pieces them toss them in a mixing bowl.
Here’s the tricky part. Crack 2 eggs, mixing in the egg whites only.
You’ll have to set the yolks aside for another part of the cooking process.
Don’t be afraid to ask for help if this part proves to be difficult.
Mix the scallion and egg whites thoroughly until all the pieces are coated with egg.
Now comes the fun part.
Slice your bacon down the middle first, then take both pieces and slice down the middle lengthwise.
Then cut them up in to small, bite size pieces. Fry the bacon for 3 to 4 minutes.
You don’t need oil for this. Let the bacon do its job.
Set the bacon aside, then on another pan, melt some butter then grab those hollow pieces of bread and toss them on the buttered pan.
Add your chopped up bacon in to that bowl of scallions and egg whites.
Mix them well then use a spoon to scoop up the egg mix, adding them into the hollow space of the toasted bread. Fry for 2 minutes on the lowest setting.
Be generous with the bacon, scallions, and eggs mixture. You want them as thick as the bread themselves.
Let them cook for 2 minutes then flip them over slowly and let the other side fry until they’re a nice golden brown color.
Then get those 2 egg yolks you set aside and place them on top of the bread. Cover the pan and let it sit until they cook.
Set them on a plate. Parmesan cheese may be optional but we all know it’s ridiculous not to grate any on top.
Now doesn’t that look fantastic? It’s almost a shame to dig in. But hey it’s food so go ahead and enjoy this succulent meal.
