Good thing there are recipes out there that can help you impress your friends without making too much of a fuss.
You can make this dish as a snack or an appetizer before the main event. As we will be using some specialized ingredients, it will tremendously help if you plan your grocery list ahead. You can also opt to substitute other ingredients if they’re not available, but this will affect the overall taste and appearance.
Have you ever heard of yufka?
Yufka is a thin sheet of dough that’s used to make Turkish flatbread, pastries, and pies. But as part of the Mediterranean food culture, it can go by another name which makes it easy for us to look for it in stores.
Filo (or phyllo) can be bought in some groceries and Greek markets. It can be sold per pound and fresh. You can also buy these ingredients online if you prefer. You just have to be a bit careful, though, because these dough sheets are paper-thin.
Here’s what you’ll need.
3 sheets of yufka/filo
1 bottle (200ml) natural mineral water or soda water
1 tsp baking soda
100 grams or ¼ lbs of crumbled white cheese or mozzarella
2 eggs
70 ml or ¼ cup of vegetable oil
Here’s how you prepare the dough.
1. Unfold and spread out your yufka/filo sheet. Tears here and there are okay. No need to stress over it!
2. Then, grab the lower end and fold it over until the upper end of the sheet. You’ll end up with a half-circle folded dough sheet.
3. Continue folding from the lower end until the sheet resembles a flat tube strip.
4. Slice the sheet into thick strips, about three inches wide or so.
5. Unfold a strip of dough and lay it on the surface. Crimp the dough towards you until it looks like the side of an accordion. Repeat this with the remaining strips.
Here’s how you prepare the glaze.
1. In a mixing bowl mix together the water and baking soda.
2. Add in your eggs and mix.
3. When the egg is incorporated, add in your cheese.
Follow these steps to assemble the dish.
1. In a pie pan, line your dough around the center and fan them out on the edges.
2. Using a ladle, scoop your glaze and pour it over the dough.
3. Place it inside your oven and bake it at 180 degrees Celsius or 356 degrees Fahrenheit for 35 minutes.
