Easy Taco RIce

I always love when two delicious foods are combined to create one mega-delicious dish. Introducing… easy taco rice.

This recipe actually includes four of our favorite things: ease of creation, inexpensive cost, taco taste, and rice.

All of the best things, plus it’s loaded with flavor.

This yummy dish is vegan-friendly and can be served with beans, in a burrito, as an ingredient in a taco salad bowl, or a base for a variety of other delicious dishes.

Sautéing the rice in oil is what makes it so damn good and a touch greasy. But not greasy in a bad way, in a very good way! It makes the rice tender and mouthwatering rather than your traditional rice which slightly drier and on the fluffier side.

It costs only $2.27 in total to make or just $0.38 per 1 cup serving (this recipe makes 6 servings).

It takes only 5 minutes to prep and put together and 35 minutes to cook, so you can have this dish ready to eat in just 40 minutes.

Here’s how to make this easy taco rice:

Ingredients

  • 2 Tbsp. of cooking oil $0.08
  • 1 small onion $0.32
  • 1 clove of garlic $0.08
  • 2 cups of long grain jasmine white rice $1.32
  • 1/2 Tbsp. of chili powder mix $0.15
  • 1/2 tsp. of cumin $0.05
  • 1/4 tsp. oregano $0.02
  • 3 cups of water $0
  • 1 tsp. of salt $0.05
  • 2 sliced green onions $0.20

Directions:

Step 1) Mince your garlic and finely dice your onion. Then, mix the two together in a medium sauce pot with your cooking oil. Cook your onions and garlic on a medium heat until they become soft and transparent.

Step 2) Toss in your raw rice, chili powder, cumin, and oregano. Keep stirring your mixture for about 2 minutes to make sure that the rice and spices are toasted. The rice will be making a crackling noise.

Step 3) Next, pour in your water and salt and mix everything around. Put a lid on your pot and let it come to a boil on medium-high heat. Once your pot starts to boil, you can lower the heat and let it simmer for 15 minutes.

Step 4) When time is up, turn the heat off and let your pot sit for 10 minutes with the lid still on. Then, fluff your rice with a fork and serve it with sliced green onions.

Make sure your rice makes it to the plate and not directly into your mouth from the pot. This recipe is pretty darn tasty, so good luck with that!
