7 simple ingredients make perfection:

  • 500 grams (1 pound) of big round potatoes.
  • 90 grams (3/4 cup) of all-purpose flour for the dough mixture, add more for coating.
  • 4 grams (1 teaspoon) sugar, optional.
  • Salt and Black pepper to taste
  • Mozzarella cheese or other stretchy cheese like Cheddar or Swiss Cheese.
  • Oil for cooking. Any cooking oil will do.

Start by peeling the potatoes.

Chop them into medium-sized cubes. Place the cubes into a pot and add water with a pinch or 2 of salt.

Boil the potatoes until they are tender enough that a fork can be punched through them without resistance.

You can also opt to steam them.

Let’s do the mash.

Next, remove the potatoes from the hot water into a bowl.

While hot, mash them with a fork (a potato ricer or a potato masher would also work) until you have a smooth and creamy texture.

Bring in the flavor.

Add the all-purpose flour, sugar, salt, and pepper to the mashed potatoes.

Mix them until all of the ingredients are well mixed.

You should get a not-so-sticky and slightly dry, but soft, mix. If the mixture is too wet, add a bit more flour and mix again until you get the desired texture.

Prepare your preferred cheese and slice them into small, thin square pieces.

The more the better.

Now we form our pancakes.

A 1.5-inch ice cream scooper is ideal, but you can use a spoon.

Before you do anything, press your palm into the flour so the dough will not get sticky.

You get 2 scoops of the dough and form it into a disk about 2.5 to 3 inches in diameter.

Add about 3 to 5 slices of cheese, then use the sides of the dough to fold to the center, covering the cheese to form a ball.

Mold the dough again to the same disk shape. Redo the process until all the dough is used.

You should get 9 potato pancakes.

The sizzling sound of satisfaction

Prepare your frying pan and pour about 2 tablespoons of cooking oil, don’t add too much.

When the oil is hot with medium heat, place the pancake dough.

Fry each side for about 5 minutes or until golden brown. Repeat the process for all of the pancakes.

Remove the pancakes from the pan and place them into a paper towel or table napkin to drain the excess oil.
