Is there anything more delectable than a well-made lemon icebox cake? Which ingredient makes this sweet dish such a win for around the home? Well, the thing that makes this recipe so great is just how easy it is to make. In fact, the freezer does most of the work! It’s a low-stress, low-effort recipe from video that will whet the whistles of the whole family.
What you’ll need:
- 8 oz cool whip
- 3 cups milk
- 2 packs lemon pudding mix
- 16 oz package graham crackers
Icing:
- 1/2 cup butter
- 2 tbsp milk
- 2 tbsp lemon juice
- 2 cups powdered sugar
Let’s get prepping!
Grab a mixing bowl, and prepare your ingredients. Add your cool whip, milk, and lemon pudding mix into the bowl and combine well. Stir until the mixture has a smooth consistency and all ingredients are well combined.
Prepare your dish.
Prepare a large oven-safe dish. Line the dish with foil and prepare your mixture, as well as the graham crackers.
Make your layers, playa!
Lay down a single layer of graham crackers along the bottom of the dish to create a cracker crumb base. Try to spread them evenly across the entirety of the bottom of the dish, and fill in any gaps with smaller broken pieces of cracker.
Get ready to spready.
Evenly spread a layer of the mixture over the surface of the crackers. Try to get a layer that is approximately half an inch deep.
Layer, rinse and repeat!
Okay, maybe skip the rinsing bit, but do the repeating part! With your first layer done, lay another base of graham crackers down on top of that first layer, then again spread a layer of the mixture over that. You should have two even and level layers.
Prepare your icing layer.
Soften your butter and place in another mixing bowl with the milk, lemon juice, and one cup of powdered sugar. Mix well with a beater, until the dry and wet ingredients are integrated evenly. Once everything is mixed well, add the second cup of powdered sugar. This is to ensure that it doesn’t clump.
To top if off!
Carefully spread the topping layer of icing over the surface of the cake, over a top layer of graham crackers. Be careful not to displace any of those crackers while you spread the icing!
Everybody freeze!
Put your cake dish into the freezer for around 4 hours. The nice thing about this dish compared to other cakes is that you don’t have to preheat an oven, your freezer should already be cold. Then you’ll have a beautiful lemon icebox cake, ready to serve.
