This Cheesy Chicken Casserole Is An Ideal Dinner Recipe
This delicious meal dates all the way back to the 1950s!

When it comes to simple dinners, it’s hard to go wrong with a delicious casserole. While the struggle to come up with weekly meal plans that both tastes good and is easy to make. Perhaps second only to making a hearty slow cooker dish, throwing a bunch of ingredients in a dish with some sauce and cheese and baking it is a great way to keep your refrigerator stocked for a week.

If you haven’t guessed yet, today’s recipe is for a casserole as well and it’s sure to be a hit with the entire family. That’s right, we’re going to be making cheesy chicken divan casserole and it crosses off all the must-haves for a delicious dinner dish. It comes packed full of cheese, it has a lean protein, some lean carbs and even some veggies as well. This is a recipe you’ll be coming back to again and again—so what are we waiting for?

Here’s what you’ll need:

  • 2 cups of cooked brown rice
  • 2 cups of chicken, cooked and shredded
  • 2 packages of frozen broccoli florets (10 ounces)
  • 1 can of cream of chicken soup
  • 1/2 cup of mayonnaise
  • 1 teaspoon of lemon juice
  • 1/2 teaspoon of curry powder
  • 1 cup of shredded cheddar cheese

Here’s what you do:

1. To get started, make sure to set your oven to 350 degrees to preheat. In the mean time, get a large baking dish and lightly grease it up as well. If you haven’t already cooked your brown rice, boil some water and do so according to the instructions on the package. Once it’s done, put the rice in the bottom of the baking dish and spread it out evenly.

2. With your rice layer in the dish, top it with a layer of broccoli followed by a layer of cooked and shredded chicken. If you don’t want to bother cooking a whole chicken yourself, you can buy a rotisserie chicken at the store and shred it to save some time. Keep alternating the layers of broccoli and chicken until you’re all out of ingredients.

3. After that, get out another big bowl and pour in your cream of chicken soup, mayonnaise, lemon juice and curry powder. Mix the entire thing together until it’s evenly incorporated and smooth.

4. When you’re ready, pour that creamy mixture on top of the broccoli and chicken in the dish. Once it’s in, top it all off with a hearty sprinkling of cheddar cheese.

5. When the oven is hot enough, pop the dish in the oven and let it bake for 20 to 30 minutes. Check on it throughout that period to make sure the cheese is melted and the sauce gets bubbly. Serve it while it’s hot and enjoy!
