If you haven’t discovered puff pastries yet, now’s the time. They’re sweet, bite-sized, and crowd-friendly – what more could you ask for? These pastries may seem intricate and delicately prepared, but they are actually incredibly easy to prepare. With a prep time of only 10 minutes and a baking time of around 20 minutes, they’re easy to make in a hurry, but fun to prepare as well.
Whether you’re craving a quick snack or you’re preparing dessert for a party, one thing’s for sure: make an extra batch. You’re gonna need it.
INGREDIENTS:
- 2 Sheets of Ready Rolled Frozen Puff Pastry (thawed)
- 200g of Blueberries (Fresh or Frozen)
- 3 tsp. of Corn starch
- 3/4 Cup of Caster Sugar
- 1/2 Cup of Water
- 200g of Ricotta Cheese
- 2 Tbsp. of powdered sugar
- Milk (for brushing)
First, preheat your oven to 400°F.
Add the blueberries, corn starch, caster sugar, and water to a pan and gently stir under low heat. Keep stirring until the blueberries have “popped” and you have a thick, blue mixture. Set aside to cool.
In a small bowl, combine ricotta cheese and powdered sugar. Set aside.
Cut each pastry sheet into four squares. In each square, add the ricotta cheese mixture in the center, followed by the blueberry mixture. Fold the two corners to the middle to close up the pastry and brush each pastry with a little bit of milk.
Bake at 400F for about 10 minutes.
Once they’re done, you’re gonna want to let them cool for another 10-15 minutes as they are extremely hot. Add some powdered sugar on top for decoration and enjoy!
