Ingredients

For the recipe crust

  • 1 cup crushed pecans
  • 1 cup all-purpose flour
  • 1 /2 cup melted butter
  • 350 8 to 20 minutes

  • 8 oz. cream cheese
  • 1 c. powdered sugar
  • 1 T. Lemon juice
  • 8 oz. cool whip

Lemon pudding

  • 2 small or 1 large box of instant lemon pudding
  • 3 cups milk
  • 8 oz. cool whip

For the crust (first layer)

Step 1: Preheat your oven to 350°F (175°C).

Step 2: In a mixing bowl, combine 1 cup of all-purpose flour and 1/2 cup of melted butter.

Step 3: Stir the mixture until it forms a thick, pecan shortbread crust.

Step 4: Add 1 cup of chopped pecans to the mixture and mix well to ensure even distribution.

Step 5: Grease a 9×13 baking dish with butter.

Step 6: Press the crust mixture into the bottom of the prepared baking dish, spreading it evenly.

Step 7: Bake the crust in the preheated oven for 8-10 minutes. Allow it to cool completely.

For the cream cheese filling (second layer)

Step 1: In a separate bowl, combine 8 ounces of cream cheese, 1 cup of powdered sugar, and 1 tablespoon of lemon juice.

Step 2: Use a hand mixer to blend the ingredients until smooth.

Combining the second layer with the cool whip (third layer)

Step 1: Gently fold in 8 ounces of Cool Whip into the cream cheese mixture. Avoid using a hand mixer to prevent breaking.

Step 2: Once combined, set aside.

For the lemon pudding layer (fourth layer)

Step 1: Choose either two small boxes or one large box of instant lemon pudding mix.

Step 2: Disregard the box instructions and mix the pudding with 3 cups of milk for a creamier texture.

Step 3: Optional: Add lemon juice or zest for extra flavor.

Step 4: Stir the mixture until smooth.

For the layering process

Step 1: Once the crust has cooled, spoon dollops of the cream cheese and cool whip mixture onto the crust.

Step 2: Spread the cream cheese mixture evenly over the crust to create the second layer.

Step 3: Spoon dollops of the lemon pudding mixture over the cream cheese layer.

Step 4: Spread the lemon pudding mixture evenly to form the third layer.

Step 5: Finish by adding dollops of Cool Whip or homemade whipped topping as the fourth layer.

Step 6: Spread the cool whip evenly over the lemon pudding layer.

Step 7: Optionally, garnish with chopped pecans or lemon slices.

For the final touches

Step 1: Refrigerate the assembled dessert to allow it to set.
