Here’s a recipe you can try. It’s easy to make, and the ingredients are easy to find. This one, however, utilizes natural yogurt for its base marinade or sauce.

Yogurt is one of the most suggested marinades, though not as widely used as the others. It may have acidic properties, but it is not like vinegar or lemon that toughens the meat. Yogurt does otherwise.

While other marinades cook and caramelize the sugar first, using yogurt cooks the dairy in it. This makes your meat tender on the inside but crispy or caramelized outside—a perfect combo for a great dish.

Here are the ingredients that you’ll need:

  • 1.3 lbs. Chicken breasts
  • 2/3 cup Natural Yogurt
  • ¼ cup Olive oil
  • Salt
  • Black pepper
  • Paprika
  • 2 Garlic cloves (grated)
  • 1 tsp of mustard
  • 2 Medium-sized potatoes
  • 1 Spring onion
  • 5 Mushrooms
  • Mozzarella or cheddar cheese (grated)

First, slice the chicken breast halfway through in a crisscross pattern.

This allows the chicken to absorb the marinade or sauce when cooking. It will make the chicken more tender. Doing this also helps cook the chicken evenly and quickly.

Next, mix the dry and wet ingredients in a bowl.

Pour in the yogurt, olive oil, mustard, salt, pepper, paprika, and garlic cloves into the bowl. Mix all ingredients thoroughly. One home cook also suggested adding a bit of grated ginger along with the mix, but only do so if you like its taste.

Place the chicken breast in the bowl.

Make sure that each piece is well coated with the sauce, and dip and soak it with the sauce. Cover it with cling wrap and chill in the fridge for an hour.

Slice the potato and mushroom into even slices. Cut the spring onions into small cubes. Once done, get an oven tray and grease it with olive oil. Layer the potato slices on the tray and sprinkle a pinch of salt all over. Then, layer the mushroom and spring onions.

Take the chicken breast out of the fridge.

Place them evenly to cover as much space on the tray as possible. Pour the remaining sauce into the tray and spread evenly.

Preheat oven to 365 degrees Fahrenheit.

Cook the chicken in the oven for 45 to 60 minutes.

Take the chicken out of the oven and sprinkle some cheese if you like. You can use cheddar or mozzarella cheese. Bake it again until the cheese has melted.
