One of my favorite go-to dishes when I’m not sure what to make for dinner is chicken and dumplings. If you didn’t know, chicken and dumplings recipes originate all the way back to the early 1900’s. Originally considered a luxury dish in the South, it’s now become a dish enjoyed by people around the country for both it’s deliciousness and low cost to make! You’ll need the following ingredients to start:
- half an onion (chopped)
- two to three chicken breasts (skinless, boneless)
- 1 can of biscuits
- parsley
- pepper
- 2 tablespoons of unsalted butter
- 14 ounces of chicken broth
- two cans of cream of chicken soup
First, place your chicken breasts in a slow cooker and top the chicken with butter and the soups. Be sure not to add any additional water.
Next, add chicken broth and onions. Add spices until you have a taste you’re satisfied with, then mix everything thoroughly before putting on the cover.
Turn on the slow cooker and keep it on low for around 6 hours.
An hour before you’re ready to serve the chicken, take off the cover and use two fork to shred the chicken as much as possible.
To make your dumplings, cut rolls into 9 individual small pieces and add them to your slow cooker. Make sure you’re careful when you add the pieces to make sure it doesn’t splash!
Cook for another hour or so. You’ll know it’s ready when the dumplings aren’t raw in the center.
