What we have here is quite an interesting recipe. It’s fun to do, tastes delicious, and of course, healthy!
The main star of our dish today is none other than “zucchini.”
Before we proceed with the ingredients, did you know that the zucchini packs a punch when it comes to important vitamins and minerals?
It also has a lot of antioxidants, is low in calories, and is rich in fiber. Fiber is vital in our gut health as it plays an important role in our digestion.
This recipe isn’t just great as a snack while you work, it can also be a great appetizer, and your kids will absolutely love them!
So, instead of eating junk foods, why not try this zucchini egg recipe that will not just fill your tummy, but will also keep you entertained for a while.
Let’s proceed with the ingredients:
You will need 1-2 zucchinis
1 tablespoon of olive oil
1 tablespoon of flour
salt
1 cup of sour cream or heavy cream
1 egg
salt
pepper
2 tablespoons of flour
olive oil
Here’s what you need to do:
- Wash and cut your zucchinis
- Cut the middle part of the zucchini using a cookie cutter – set aside
- Get all the zucchini meat and put them in a food processor – blend until smooth.
- Separate the juice from the pulp of the mixture
- In a pan, heat some butter and put the flour
- Mix it until smooth
- Pour the zucchini juice and stir well
- Season with salt
- Then pour the heavy cream
- Mix well until creamy
This creamy mixture will serve as your sauce. Set aside
For the zucchini circles:
- Get the pulp to mix with an egg
- Season with salt, pepper, and flour
- You’ll have a creamy batter – set aside
- Prep the cooking pan by pouring olive oil – allow to heat
- Place the zucchini circles in the pan, make sure that they are not crowded
- Pour the right amount of batter and allow to cook
- Grate cheese and put some on each zucchini bite
- Allow cheese to melt
- Plate them with the zucchini-based cream and enjoy
We love how creamy this recipe is. It doesn’t even feel like you’re eating veggies. You can also tweak the recipe to your liking. You can sprinkle chili flakes or even bacon crumbs.
