Dad gives secret to his easy loaded nachos recipe that the whole family loves

Nachos are a comfort food staple, and easy for anyone to make. They’ve kept thousands of college students alive during exams, and brought people together for Super Bowls and poker nights.

And yes, it’s delicious to simply melt some shredded cheese over plain corn chips. No one in their right mind would dare argue that… but we both know you can do better.

So next time you have a hankering for the ol’ faithful, why not try to spice it up with his Mexican twist on an already Mexican dish.

You’ll need the usual suspects like green onions, guacamole, lettuce and tomato as well as some chicken breast and Mexican style tomato sauce.

If you have a pre-mixed Mexican seasoning and regular tomato sauce that’ll work too.

Let’s get started!

If you’re working to make the seasoning from scratch, mix your spices together in a small bowl: oregano, garlic powder, chilli powder, cumin, salt, and pepper.

Get out your skillet, set it to medium-high, and melt the butter and oil. Cook your chicken breast for about 5-7 minutes on each side, then remove from pan.

Once the chicken has had some time to cool, shred it by pulling it apart with two forks.

Add the tomato sauce and spice mixture to the existing pan and mix it in with the shredded chicken while simmering, until it’s all coated.

And here’s where it gets really good…

Instead of regular nacho chips, pile some Doritos on a plate and top with your Mexican chicken and shredded cheese.

If you’re a spice lover, try some Flaming Hot Doritos for an extra bite.

Now, just microwave or bake your nachos until the cheese has melted, and voilà!

These will be sure to blow your guests, your family, or your buddies away.

If you’ve ever wanted nachos to be even more Mexican than they already were… here you have it.

Believe it or not, nachos were actually invented for Americans.

They still originate from Mexico, but were thrown together for a group of US military wives in 1943. Ignacio “Nacho” Anaya needed to make something quick and threw the dish together.

It was a big hit and the rest is history! He should really be considered a national treasure. They’re now a TexMex staple. I think you’d be pressed to find someone anywhere across the country that had never tried nachos!

I guess it’s not entirely shocking that such a simple dish became so popular.

First of all, who doesn’t love cheese? And then of course most Mexican food has a kick to it, so for anyone who wasn’t accustomed to spice back in 1943, nachos would have been a welcome comfort.

And hey, that’s still true to this day. There are pros and cons.
