After a day’s hard work, you go home and just want to treat yourself to a savory home-cooked meal.
Can you imagine that? Filling your tummy with good food can lift your spirit. You deserve it!
Though, just thinking about preparing hearty meals can be overwhelming, so we end up whipping instant ramen or ordering fast food.
That’s why we’re thrilled to share this amazing recipe that isn’t that delicious but also very easy to do.
Rose Demesier of Island Vibe Cooking shares an easy way to cook Creamy Cajun Chicken Pasta.
First, you will need to boil some water. Add salt and little oil. Then pour in your pasta and cook until Al dente.
Drain and set aside.
Get two chicken breasts and place them inside a zip lock. Using a meat tenderizer, flatten your chicken but not too much. Just enough for it to cook quickly and not dry out.
Once you are done, place them on a bowl or plate. Drizzle some oil and then add your seasoning.
Rub the seasonings on both sides, massage those chicken breasts and let them marinate for a few minutes.
Prepare your skillet and add some oil. Cook your chicken for about 5-10 minutes.
Monitor while cooking. We don’t want to burn the chicken, right?
Flip once golden brown and then allow the other side to cook.
Once cooked, remove the chicken and let it rest.
In the same skillet, add your butter, onions, and red bell pepper.
Add in your diced tomatoes and cook until your onions are translucent.
Once ready, add your heavy cream and chicken broth. Mix well, then add the cream cheese, and mix again.
Next, add chicken powder, and cajun seasoning.
You can also add some salt or pepper. Taste until you are satisfied.
You can now add your pasta and stir.
While that is cooking, get your chicken and cut it into bite-size pieces.
Rose put one of the chicken breasts with the pasta and then added some parmesan cheese.
She topped the other breast while plating.
It’s filling, savory, and oh-so-flavorful!
Here are the ingredients:
16 oz. of penne pasta
2 chicken breasts
1 tbsp. of your favorite Cajun seasoning
1 tsp. of onion powder
1 tsp. of garlic powder
1 tsp. of dry parsley
1/2 tsp. paprika
1/2 tsp. old bay
1/2 kilo chicken breast
1 tbsp. oil
1 tbsp. unsalted butter
1 small onion chopped
1/2 medium size bell pepper chopped
4 oz. diced tomatoes
2 cups heavy cream
1 tsp garlic 4 oz. cream cheese
1 tsp. chicken bouillon
1 tsp. Cajun seasoning
1/2 cup parmesan cheese
Tips from Rose!
– Don’t be afraid to use chicken breasts. If you know how to cook them properly, you’ll never go wrong.
– Flatten the chicken breasts to absorb more flavor and to cook faster. Be careful not to flatten it too much, that will make it dry.
– Once cooked, let your chicken breasts rest. This will allow the meat to release more juices.
– Always taste before seasoning or you will end up with a salty dish.
– You can add mozzarella or any cheese you want. It’s all up to you.
