These Creamy Bacon Brussels Sprouts Are So Delicious
The creamy sauce mixed with crunchy bacon make this a perfect side dish.

How often do you use Brussels sprouts when you’re cooking? If you’re like the rest of us, chances are you don’t use them very often. For whatever reasons, these veggies get a bad reputation in childhood as one of the smellier, worse-tasting foods on the planet. As we get older, we never really re-evaluate that opinion most of the time. In reality, sprouts are only as good as the recipe that they’re used in—and they can actually be really delicious under the right circumstances.

Today, we have a delicious and low-carb recipe that will show you just how tasty these little things can be. We’re going to be making Brussels sprouts in creamy garlic parmesan sauce, all with crispy bacon on top. The combination of flavors in this recipe is incredible and allows for a very rich flavor while still getting the healthy nutrients of the sprouts in as well. So are you ready? Let’s do it:

Here’s what you’ll need:

  • 10 ounces of bacon, cut up into strips
  • 2 tablespoons of butter
  • 1 pounds of Brussels sprouts, trimmed
  • 5 cloves of garlic, minced
  • 1 1/2 cups of cream
  • 1 1/2 teaspoons of cornstarch (mixed with 1 tablespoon of water) (optional)
  • 1/3 cup of shredded mozzarella
  • 1/4 cup of grated parmesan cheese
  • salt
  • pepper

Here’s what you do:

1. First, make sure to preheat your oven to 375 degrees. While it’s warming up, get an oven-safe skillet going over medium heat and fry your bacon up in the pan. Keep cooking it until it turns crispy before transferring the bacon to paper towels to soak up the extra fat.

2. Drain the bacon fat out of the pan but leave one to two tablespoons in for the other parts of the recipe. Next, add your butter to the pan. When your Brussels sprouts are cleaned, trimmed and chopped, add those to the melted butter as well. Season everything with salt and pepper to your liking.

3. Next, scrape the bottom of the pan with a spatula to clear off any sticky browned parts and keep cooking for about six minutes, stirring everything occasionally. Keep cooking the sprouts until they start to develop a slight char around the edges.

4. Add your garlic to the pan as well and stir everything together for about a minute. After that, add your cream in as well, turn the heat down to low and let everything simmer for three to four more minutes. If you think the cream is too thin, you can also add in your cornstarch slurry to thicken things up at this stage.

5. After that, add your bacon as well and make sure everything is evenly combined. Add your cheeses into the pan as well and put the entire pan in the oven for about 15 minutes to bake. For even crispier cheese, put the pan in the broiler for a few minutes towards the end.

6. Once it’s done, season it with extra pepper if you’d like and serve while it’s hot!

Although it can be intimidating to use a new ingredient you haven’t worked with before, this recipe is one that can’t fail—and the whole family is sure to love it.
