It’s not a grilled cheese sandwich if you don’t make it on a grill.
Most people would make this famous comfort food in a skillet or a sandwich maker, but nothing compares to cooking it on a barbecue grill.
The key to a delicious grilled cheese sandwich is cheese – lots of ‘em!
You can choose whatever cheese you like.
However, this recipe from Cowboy Kent Rollins suggests using four – American, cheddar, pepper jack, and mozzarella because they go well together.
You can do more research on which cheeses would taste good together in case you don’t like any of those on the list.
The grill you use would also matter in the cooking process.
Kent Rollins used a grill with a top rack to slightly toast the sandwiches before placing them on the bottom rack.
If your grill doesn’t have the top rack, he suggested preheating it on low heat and letting it stay at that so as not to burn your bread immediately.
Butter is also a key ingredient in making your sandwich crunchy on the outside yet moist inside.
You need to brush melted butter alternatively on each side of the bread when it already forms a thin crust.
This allows the butter to seep through the bread while creating excellent, crunchy grill marks on the surface.
Lastly, cooling time is important.
A grilled cheese sandwich like this is so irresistible that you want to eat it immediately.
Aside from burning your tongue and mouth, it also prevents the cheese from oozing out and sticking to the roof of your mouth.
Ready to make this recipe? Here’s how to make the “best ever” grilled cheese sandwich on a grill!
Ingredients:
- 8 slices of bread
- 1 – 1 ½ sticks of butter, melted
- 8 slices American cheese
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper jack cheese
- 1 cup shredded mozzarella cheese
- 1 – 2 jalapenos, grated
- Garlic powder
- Grated Parmesan cheese
Directions:
- Preheat the grill to hot, then turn to low heat before placing the bread.
- Brush some butter on one side of the bread and place it on the top rack of the grill, buttered side down. Then do the same on the side facing up.
- Grill until the bottom side forms a light crust and flip.
- Place a slice of American cheese on each piece of bread, then top around ¼ cup of all remaining cheese on four of the bread slices. You can add some grated jalapeño to add some spice to your sandwich.
- Take the bread with only the American cheese and cover its other half to make four sandwiches. Shut the grill lid and let it cook for two minutes.
- Open the grill and brush more butter on top. Flip the sandwiches and give them a light press using a spatula. Shut the lid and cook for another two minutes.
- Again, brush some butter on the top and sprinkle some garlic powder.
- Flip it on the lower rack over low heat. Cook until grill marks start to appear, and then flip.
- Brush butter on the top side once more and sprinkle some parmesan cheese. Continue cooking until you have the same grill marks on the other side.
- Take it out of the grill and let it cool for a minute. Slice in half and serve.
