Aside from it being the source of your energy, it should also be delicious and flavorful.

The Country Breakfast Skillet.
The ingredients are pretty straightforward:
- ¾ lb Thick Bacon (about 12 slices)
- 4 Eggs
- 1 cup diced Red Potatoes
- ½ cup chopped Green Peppers, you can also use Yellow or Red Peppers, or mix them all together
- ¼ cup shredded Cheddar Cheese
- Fresh parsley, minced
- Salt and Pepper to taste
- Olive Oil
- Butter
First, slice bacon into 1-inch pieces.
Once that is done, we’ll preheat the skillet in medium-high heat.
Adding olive oil is optional if you’re using Turkey bacon which will not render too much oil.
Sprinkle a little oil into the skillet, then add the bacon after. Render off the oil from the bacon.
Remove it from heat when it’s golden brown but keep the oil.
Place the bacon on a plate with a paper towel to remove excess oil. You can turn the flame off while preparing the other ingredients.
Now, let’s cut the bell pepper into small pieces. Mincing is optional, but you can also go with small diced peppers.
Next is to prepare the potatoes.
Clean them first if there is still dirt, then cut them into cubes. You can use a french-fry cutter for easy cutting to make sure they are the same size.
Back to the skillet with the bacon oil, turn the flame to medium-high heat.
When you see smoke coming out of the skillet, pour in the bell pepper, whisk for a few seconds then add the diced potatoes.
Cook them until golden brown or about 8 to 10 minutes.
The smell is unbeatable.
Add the bacon back into the skillet with the bacon and pepper.
Mix well and remove from the skillet to a plate with paper towels.
Time for the star of the recipe.
Bring in the eggs.
Using the same skillet with the remaining bacon oil, you can opt to add either olive oil or butter for more grease while bringing it back to temperature.
Cooking eggs comes with options.
You can do scrambled eggs, no yolk, or simple sunny-side up. Add salt and pepper to taste.
While the eggs are still cooking, slowly place the cooked bacon, pepper, and potato mix around them.
It’s okay if the eggs are buried.
For presentation, you can just let the yolks pop out.
Add the shredded cheddar cheese on top of them as evenly as possible. Remove from heat.
Lastly, sprinkle the parsley nicely into the skillet as an added texture and color and serve on a separate plate.
The recipe is good for 2 to 4 people depending on their serving preference.
