When you overcook a chicken breast for a few minutes, the difference in taste is hardly noticeable. Steak, on the other hand, is a delicate art.
Steak is unique in that everyone prefers to eat it in a different way. Some people like thicker or thinner cuts, some people like their steak more or less rare, and the seasoning really makes a difference. Many of us don’t have the luxury of buying our ingredients fresh from the market every single day, so the freezer becomes extra important when it comes to food preservation. This leads to a whole new problem: taking the steak out early enough for it to fully thaw. This extra step can add hours to your dinner routine. It is easy to forget to take the meat out of the freezer way before you are hungry for it. Is there a better way?
The answer is yes! As it turns out, the extra step of thawing does not improve the flavor of your steak. In fact, the steak will actually taste better if you leave it frozen all the way up until you are ready to cook it. Who knew? To figure out the reasoning behind this madness, America’s Test Kitchen experimented with their own steaks.
The kitchen froze 8 pieces of steak. Next, they thawed half and left the other half frozen until it was ready to be cooked. They expertly prepared all of the steak, then compared flavors and textures. The result? The steak that they never thawed was actually much better. The thawed steak became overcooked on the outer edges – as we have all experienced. The unthawed steak, though, was cooked evenly throughout each piece. Not only that, but the unthawed steak did not lose as much moisture as the thawed steak. There was a clear winner in this contest.
Cooking steak will probably never be an easy task, but these results can at least make cooking a delicious steak slightly easier. Next time you’re in the mood for steak, you can relax knowing you don’t even have to think about thawing it.
