The holidays are upon us and we need to be creative when it comes to treats.

In a span of a few months, we’ll go through Halloween, Thanksgiving, Christmas, and the New Year.

These consecutive celebrations can empty your pantry and leave guests wanting more.

This recipe is a crowdpleaser.

With this simple recipe, you’ll be able to make a delectable treat that doesn’t need baking or a long line of preparations.

It’s easy, delicious, and luxurious, which makes it a perfect dessert, giveaway, or gift.

The ingredients:

  • 2 cups of roasted peanuts
  • 200 g of biscuits like Iberia or Goya Marie biscuits
  • 2 tbsp of cocoa powder
  • 1 tbsp of butter
  • 250 g of dark chocolate (choose the 55% for this recipe)
  • 30 g of milk chocolate for garnish.

You won’t need any eggs, flour, or yeast just to make this amazing recipe. Now that you have your ingredients, let’s put it together.

First, prepare your ingredients.

Using a food processor, crush your roasted peanuts then set them aside.

Next, crush your biscuits and mix them with your crushed peanuts.

Incorporate them together with the butter and the cocoa powder.

If you don’t have a food processor, you can chop the peanuts or crush both using a rolling pin.

Just dump your biscuits or your peanuts in a Ziploc bag then pound it.

Then, using a double boiler, melt the dark chocolate.

If you don’t have a broiler, you can use a fire-safe glass bowl and put it over a deep saucepan.

Just fill the saucepan with water and fire it up. The steam will then heat the glass bowl on top of it, which in turn, would melt the chocolate.

Next, assemble the “biscuit log”.

Lay and spread out a saran wrap film over your working surface.

Scoop biscuit mixture onto saran wrap.

Shape it into a rectangle that you can roll later.

For an approximate shape, start with a foot-long, half an inch thick, and about three or so inches wide.

Press the mixture to make it more compact.

You can pipe caramel spread, cream, or mascarpone in the middle but this step is optional.

Then, fold your biscuit mixture to the center and make a roll.

Twist the ends of the saran wrap to make a more compact “biscuit log”.

Refrigerate the “biscuit log”.

After an hour take it out.

While waiting, you can also melt another batch of dark chocolate.

Use this batch to cover the logs with chocolate. Chill for five minutes.

You can drizzle caramel syrup over the logs as well to make it more luxurious. You can also use white chocolate for garnish.

Chill it again for five minutes so the garnish can settle and harden.

Soak your knife in hot water then wipe it dry.

This will help you make clean and perfect cuts for your “biscuit log”. Place them on small muffin paper for serving.

You can put it in a box too and give them as a gift.
