This Chocolate Strawberry Cake Is A Truly Decadent Dessert
Crumbled Oreos, chocolate shavings, chocolate ganache... add strawberries and this cake is a chocolate-lover's dream.

When’s the last time you made a truly delicious cake? Although most of us have a sweet tooth, we don’t always have the time to make a cake from scratch. Usually, when it comes to making a cake, we buy a box of pre-made mix and follow the instructions. Still, sometimes it can be worth it to go above and beyond to create something special. Fortunately, the recipe we have for you today is one of those special recipes.

Do you like strawberries? Do you like chocolate mousse? If you said yes, this strawberry chocolate mousse cake is not the standard cake that you’re used to—and it’s going to be your new favorite recipe.

Here’s what you need:

  • 24 Oreos
  • 6 tablespoons of melted butter
  • salt
  • 3 2/3 cups of heavy cream
  • 4 1/4 cups of semisweet chocolate chips
  • chocolate shavings
  • 2 teaspoons of gelatin
  • 2 1/2 tablespoons of cold water
  • 1/2 cup of powdered sugar
  • 2 quarts of strawberries
  • springform pan
  • stand mixer
  • piping bag

Here’s what you do:

1. We start by making the crust. Get your springform pan and make sure it’s greased down with cooking spray. Then, get a large mixing bowl and crush all your Oreos in it. Combine that mixture with your melted butter and a pinch of salt. Combine everything together and then press your mixture down into the pan.

2. Next, you can make the chocolate mousse. Get a mixing bowl and combine your gelatin and water together, letting it sit for five to 10 minutes. While the gelatin is setting, throw two and a quarter cups of chocolate chips in a heatproof bowl. Next, get a saucepan going over medium-high heat and bring one cup of heavy cream to a simmer in it. Take that off the heat, whisk in your gelatin and stir everything to combine. Finally, pour in your chocolate chips and whisk until they melt as well.

3. Put a whisk attachment on your stand mixer and beat together your leftover cream with powdered sugar until it forms stiff peaks. Next, stir in another quarter cup of cream into the melted chocolate. Finally, fold in another three-quarters of a cup until the entire thing is nicely incorporated.

4. Now that the mousse is ready, spread out a thin layer of it over your crust. In the meantime, cut enough strawberries in half to press all around the inside of your pan. After that, put in some whole strawberries in with the cut-side down (where the stem used to be).

5. Next up, put the rest of your mousse filling into a piping bag and fill in the gaps between your strawberries. After that’s done, spread a layer of mousse over your strawberries to create a flat top layer. Refrigerate the entire thing until it sets—this should take between four to six hours.

6. The last step is to make the ganache! Get a small saucepan going over low heat and pour in two-thirds of a cup of cream. Put two cups of your semisweet chocolate chips into a heatproof bowl and pour the hot cream over it. Let it all set for three minutes and then stir it up until all the clumps are gone.

7. Once it’s a little cool, pour the ganache on top of your mousse and spread it out evenly. Pop it in the fridge so it can set for about 15 minutes. Once it’s done, decorate the top with some chocolate shavings and you’re ready to eat!

As with all our recipes, have fun with this one and consider playing around with the ingredients once you get the hang of it! Dark chocolate could kick things up a notch—and mixing with a little bit of coffee powder could heighten that flavor as well. Maybe take another tack and add raspberries? We leave it up to you.
