When it comes to making dinner for the family, chicken is likely a staple of most households. It’s a lean protein which is relatively affordable and can be prepared any number of ways Still, chicken on its own is’t a particularly exciting ingredient unless it’s prepared correctly. Fried chicken is always good but it’s not always the easiest to make at home. Chicken breasts with a nice sear on them can be delicious as well but after a while, you need a new recipe to mix things up.
Fortunately, we have just the thing for that. Have you ever had chicken kiev? If you haven’t, the dish is a Russian and Ukranian style of chicken which is packed with flavor—and it’s actually very simple to make as well. After you’ve tried this one, we can almost guarantee you’ll be coming back again and again.
Here’s what you need:
- 6 boneless chicken breasts
- 1 cup of all-purpose flour
- 3/4 cup of Panko or other seasoned breadcrumbs
- 1/2 cup of softened, unsalted butter
- 1/4 cup of grated parmesan cheese
- 1/4 cup of minced, fresh parsley
- 3 beaten eggs
- 2 cloves of minced garlic
- 1 juiced lemon
- vegetable oil
- salt
- pepper
Here’s what you do:
1. Before anything else, make sure you preheat your oven to 350 degrees. In the meantime, get a medium mixing bowl and beat together your butter, parsley, garlic and lemon juice either by hand or with an electric mixer to make your butter mixture. Be sure to season it with plenty of salt and pepper as well.
2. Once you’re done with the above, roll the melted butter mix into a roll of plastic wrap and throw it in the refrigerator while you prepare the rest of your recipe. Next, take your chicken breasts and put them between two sheets of plastic wrap or parchment paper. Pound them until they’re about 1/4 inch thick. Alternately, you can also slice your chicken breasts carefully in half and cut a pocket into them.
3. Once you’ve pounded the chicken, put a cube of your butter inside the the middle of your chicken breasts. Fold in the sides to keep the butter inside—you can also use a toothpick to make sure it stays sealed.
4. Next, heat up a few inches of vegetable oil in a large pot on medium-high heat until its hot enough for water to evaporate in instantly. Next, set up your flour in one bowl, beaten eggs in another and breadcrumbs with parmesan in a third bowl. With each breast, dip your chicken in the flour, shake it off, dip it in egg, shake it off and then dip it in your breadcrumb mix until it’s coated.
5. Once the chicken is coated, throw the breasts in your hot pan and cook it on all sides until it all turns golden brown. Transfer the breasts to a plate lined with paper towels when you’re done. After you’ve done the same to all the breasts, transfer them to a glass baking dish.
6. Once the oven is heated, throw your baking dish in the oven for 15 to 18 minutes until the chicken is fully cooked. At the end, take your chicken out and serve it with potatoes and vegetables!
Cooking chicken kiev takes a few extra steps but the resulting chicken is incredibly rich, buttery and delicious. If you’ve ever had this in a restaurant and wondered how they did it, now you have the power to do it all at home! We just might make this one tonight ourselves.
