When you think of dumplings, what kind of food typically comes to mind? If you live in a big city, you might think of Chinese or Japanese food. On the other hand, if your family comes from somewhere in Eastern Europe, you may have your own family dumpling recipe that you’ve passed down throughout the years. Whatever springs to mind, chances are you probably don’t eat dumplings all that often at home, though maybe you do when you’re going out. Still, this recipe might change that!

The last time you were sick, you probably didn’t hesitate to reach for a can of chicken noodle soup. Still, even the best chicken noodle soup can be made a little heartier. For those times when you need just a little more sustenance, this chicken and dumplings recipe is sure to do the trick. Best of all? It should only take you about a half hour to make. So let’s get started.

Here’s what you’ll need:

  • 4 cups of chicken broth
  • 1 cup of water
  • 2 tablespoons of unsalted butter
  • 2 teaspoons of poultry seasoning
  • 1 teaspoon of onion powder
  • 1 teaspoon of garlic powder
  • 1 teaspoon of kosher salt
  • 1 teaspoon of dried parsley
  • 1 teaspoon of dried basil
  • 1/2 teaspoon of black pepper
  • 1 pound of boneless and skinless chicken breasts
  • 1 cup of all-purpose flour
  • 3 cups of milk
  • 2 cups of frozen peas and carrots

Dumplings:

  • 2 cups of all-purpose flour
  • 1 tablespoon of baking powder
  • 1/2 teaspoon of kosher salt
  • 1 tablespoon of softened butter
  • 1 cup of milk

Here’s what you do:

1. To begin, get a Dutch oven or a large pot going over medium-heat. Pour in your chicken broth along with the water, butter and your seasonings. Cover the pot and let it come to a boil. While the pot is going, prepare your chicken breast by chopping it into pieces. Add them to the pot and stir everything up, covering it again.

2. After that, get a container that you can reseal (like a jar or a plastic container). Pour in your flour and milk before sealing it up again and shaking it up. Make sure everything is combined into a slurry before gradually adding the slurry to the pot, stirring it up as you do it. Add in your frozen veggies at this point, stirring once more and covering it all up again.

3. While that continues to cook, get a medium bowl and combine all of your dumpling ingredients together. Be sure to mix everything up with a fork until it forms a sticky dough. At this point, you can scoop out a tablespoon of the dough at at time and drop them into your pot.

4. Once you’ve dropped in the dumplings, turn the heat down to a simmer and cover it up once more. Let it keep cooking for about 10 minutes. Test the soup at the end to make sure it can coat the back of your stirring spoon. If so, you’re ready to eat!
