This recipe makes six delicious and beautiful baked zucchini skewers.
You’ll need the following:
- 12 thin slices of zucchini
- 4 thin slices of chicken breasts
- 12 thin slices of bacon
- 12 slices of cheese
- 18 bay leaves
- breadcrumbs
- cornmeal
- salt
- aromatic mix for roasts
- olive oil
- skewers
How to prepare:
Step 1. Wash and thinly slice your zucchinis. Take your time. If it is your first time slicing them like this donât worry, you can do it.
Step 2. Massage the zucchini slices with salt and set aside on a rack. This will allow the excess water to drain and will make each zucchini slice malleable.
Step 3. Slice chicken breasts. Make sure to thinly slice each breast so that they will fit your zucchinis.
Step 4. Massage chicken slices with aromatics and salt. Drizzle with olive oil and set them aside.
Step 5. Go back and remove the zucchini slices from the rack. You will see how much water was removed by this step. Get a kitchen towel and pat dry.
Step 6. Massage zucchinis with olive oil, then add cornmeal and breadcrumbs. Coat each of the slices well.
Step 7. Time to create the skewers. On a clean surface, lay zucchini flat, followed by a strip of bacon, a slice of the chicken, then top with cheese.
Step 8. Carefully roll zucchini and add a bay leaf before putting it on the skewer.
Step 9. Add another bay leaf and insert another zucchini roll. After that, insert another bay leaf.
Beautiful, aren’t they? Each skewer should hold two beautiful zucchini rolls. Set them aside. Do this to all the zucchinis.
Step 10. Once you’re done with all the skewers, place them in a baking pan and put them in the oven for 25 – 30 minutes at 350â.
Step 11. Serve warm.
