We start by warming up the cream and milk to a soft boil. Place both into a pot or a deep pan of medium to low heat.

Get two bowls and separate the egg white from the egg yolk.

Add a third cup of sugar to the egg yolk and start mixing. Whisk until the sugar and yolk are incorporated.

Add cinnamon while you mix.

Add the ground nutmeg and a pinch of salt. When it’s well incorporated, add some vanilla to the mix and whisk thoroughly.

Then we add the preheated milk and cream mixture into the egg yolk mixture, do this slowly, and use a ladle to control the flow.

Once it’s tempered, we can pour the rest of the cream and milk mixture. Whisk until everything is well incorporated.

Place mixture back in the pan over low heat. We cook it slowly until the mixture thickens.

Don’t bring it to a boil.

When we get to a silky texture, turn off the heat and transfer the mixture into a clean bowl.

Now we prepare the meringue.

It’s better to use a machine to beat the egg white, but you can still use your hands.

Beat the egg whites until it gets thick and creamy white. Then add one-third of the sugar while still beating the egg white.

You should get a thick texture, but still softer. When done, pour the meringue into the milk, and egg mixture.

Use a spatula to mix them together.

Now we can add the booze.

This is optional, of course.

You can use any rum or whiskey you want. Be mindful if you are also making some for the kids.

In the last part, use a whisk to mix them all together.

Then put the bowl into the fridge to chill. You can either wait a few hours or leave it overnight.

We’re on our last few steps.

Remove the bowl from the fridge. Whisk it again to make sure that all the ingredients will be incorporated again.

This time, you can add extra rum or whiskey or any booze. Mix them well.

Now we add it to the glass.

Use a ladle to slowly pour in the eggnog.

You can add extra whip cream if you want on top of the eggnog and sprinkle some ground cinnamon, but ground chocolate will also be an option.

To finish it off, add a cinnamon stick. There you have it.
