Among all the different proteins you can use to put a meal together, chicken is perhaps one of the most versatile. Whenever we say something tastes like chicken, we usually mean it has a pretty mild flavor that seems to take on the flavor of everything else around it. It’s a simple, lean meat that goes well with many different veggies, spices and add-ins. Because you can find chicken basically anywhere, we tend to think that we’ve also found every possible way to cook it. There’s grilled chicken, fried chicken, pulled chicken, chicken sandwiches and more. But we bet you haven’t had it this way before.
Today, we’re going to be making cheesy chicken fritters out of simple and inexpensive chicken breasts. If you like the taste and texture of fried chicken but don’t want all the extra fat, or you like the idea of a fried chicken sandwich without going to a fast food place, this recipe is a happy medium that you can make right at home. It’s super easy to put together and sure to please. So let’s get started.
Here’s what you’ll need:
Chicken:
- 1 1/2 pounds of chicken breasts
- 2 large eggs
- 1/3 cup of mayonnaise
- 1/3 cup of all-purpose flour (or cornstarch/potato starch)
- 1 1/3 cups of shredded mozzarella cheese
- 1 1/2 tablespoons of fresh dill, chopped
- 1/2 teaspoons of salt
- 1/8 teaspoon of black pepper
- 2 tablespoons of extra light olive oil
Aioli:
- 1/2 cup of mayonnaise
- 1 pressed garlic clove
- 1/2 tablespoon of lemon juice
- 1/4 teaspoon of salt
- 1/8 teaspoon of black pepper
Here’s what you do:
1. To start, take out your chicken chicken breasts and dice them up into chunks that are a third of an inch thick. To make this process a little easier, try chopping up your chicken breasts when they are partially frozen. When you’re done, throw them all into a big mixing bowl.
2. Next, add your eggs, mayonnaise, flour, mozzarella, dill, salt and pepper to the mixing bowl as well. Stir everything up so that it’s well-combined. When everything looks good, cover the bowl in plastic and pop it in the fridge for at least two hours.
3. Once the chicken mixture has cooled enough, get out a non-stick pan and get it going over medium-high heat. Add two tablespoons of oil and wait for it to get hot before adding your chicken in one heaping tablespoon at a time. Use a spoon or a spatula to flatten each spoonful as you put it in and sauté everything uncovered for three to four minutes. After that, flip and cook for another three minutes on the other side.
4. When both sides of the chicken are a nice golden brown and the chicken is fully cooked through, you can take the pieces out of the pan. Repeat this process until all the chicken is done! If you’re serving with aioli, mix all those ingredients together in a small bowl and dip away!
While this recipe isn’t particularly difficult or unusual, the results are a truly delicious chicken snack that can give you some of the thrill of eating out without having to spend the extra money. If you’re throwing a party and want to have some nice finger foods that will take your guests slightly by surprise, this recipe just might do the trick.
