Unlike many homemade soups and chowders, this recipe is thick with delicious chunks of veggies and bacon to keep us feeling full and satisfied.

The ingredients:

  • 4 tablespoons melted butter
  • 1/2 cup finely diced yellow onion
  • 1 packed tablespoon finely cut
  • 4 cups chicken stock
  • 2 medium carrots
  • 1 teaspoon season salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 4 cups cubed Yukon gold potato
  • 6 cups large broccoli florets
  • 1/2 teaspoon celery seed
  • 3 cups whole-fat milk
  • 6 tablespoons cornstarch
  • 1 7oz can crema found in baking aisles (not condensed milk)
  • 3 cups freshly grated American block cheese
  • salt to taste
  • crispy bacon for toppings

To Make:

Step 1: saute onion then garlic on low heat.

Step 2: add chicken stock.

Step 3: boil for a few minutes, then add carrots.

Step 4: after 5 minutes, add the potatoes, then the broccoli.

Step 5: season with salt, paprika, black pepper, and celery seed.

To thicken:

Step 1: whisk together whole-fat milk and cornstarch on low heat.

Step 7: once it thickens, add the crema.

Step 8: batch by batch, add freshly grated American cheese.

Step 9: add the cheesy creamy sauce to our vegetable mixture.

Step 10: mix together on low heat.

Step 11: top with crispy bacon and more cheese and enjoy!

Pro tip from Donna: if you think it’s too thick, just add chicken stock. If too thin, add more cornstarch.
