**This recipe will make a 6″ (15cm) Blueberry Yogurt Cake:

  • 2 cups of sweetened yogurt
  • 4 medium-size eggs
  • 4 tbsp of cornstarch
  • 1/2 cup of blueberries
  • A small handful of blueberries for toppings (optional)

You will also need the following:

  • 6-inch Springform Cake Pan
  • Silicone Oven Mitts
  • Stainless Steel Strainer
  • Parchment paper
  • Cling wrap

It’s time to bake!

In a large bowl, put in your yogurt and four eggs. Mix them well.

Add your sifted cornstarch, and mix well.

Next, add your blueberries and carefully fold them into the mixture. Prepare your 6-inch springform cake pan.

Line it with parchment paper.

Pour the mixture carefully and then if you want, you can top it with around 20 pieces of blueberries.

Bake in a preheated oven for 340°F or 170°C for about 50-55 minutes.

Once done, allow it to cool.

Cover the cake with cling wrap and refrigerate for two hours.

2. Some people don’t like the smell of eggs. There’s a workaround for this. You can add lemon juice or even vanilla extract to the batter. This will give your blueberry cake a different aroma.
