What is your “go-to” dessert?
Do you buy cakes, stock up on ice cream, or bake pastries?
Like any other food, sometimes, we get used to the usual dessert options that we have.
However, buying from pastry shops also costs a lot of dough right now. (Sorry, we couldn’t help ourselves).
Ever thought of making your own?
Of course, you might be worried about how much work it would be, but what if we tell you that there are desserts out there are easy to make, affordable, and berry-licious?
A recipe from Bake Only garnered over 2.8M.
The claim is that it’s the easiest Blueberry Yogurt Cake with no added sugar, oil, or flour and is even gluten-free.
Oh! Not just that. It also has few ingredients and will be ready in no time.
Here are the ingredients:
**This recipe will make a 6″ (15cm) Blueberry Yogurt Cake:
- 2 cups of sweetened yogurt
- 4 medium-size eggs
- 4 tbsp of cornstarch
- 1/2 cup of blueberries
- A small handful of blueberries for toppings (optional)
You will also need the following:
- 6-inch Springform Cake Pan
- Silicone Oven Mitts
- Stainless Steel Strainer
- Parchment paper
- Cling wrap
It’s time to bake!
In a large bowl, put in your yogurt and four eggs. Mix them well.
Add your sifted cornstarch, and mix well.
Next, add your blueberries and carefully fold them into the mixture. Prepare your 6-inch springform cake pan.
Line it with parchment paper.
Pour the mixture carefully and then if you want, you can top it with around 20 pieces of blueberries.
Bake in a preheated oven for 340°F or 170°C for about 50-55 minutes.
Once done, allow it to cool.
Cover the cake with cling wrap and refrigerate for two hours.
That’s it. Seriously. It’s that simple.
You can now serve this delectable yogurt cake.
We promise. This cake will surely make you feel happy.
The baker does have a few tips.
1. This blueberry yogurt cake tastes better when chilled. So, it’s better to adjust the time when you will bake the cake.
2. Some people don’t like the smell of eggs. There’s a workaround for this. You can add lemon juice or even vanilla extract to the batter. This will give your blueberry cake a different aroma.
3. Remember that this recipe can be adjusted according to your liking. Some people prefer a sweeter version. If you do, you can add sugar.
4. What if you don’t have fresh blueberries? Frozen ones are also okay to use, but you have to thaw the blueberries first.
5. This recipe calls for cornstarch. If you will use another form of starch such as flour, then the taste, as well as the texture will be different.
What can you expect from this blueberry yogurt cake?
The cake itself is really moist because of the yogurt.
The cake will not only be soft but will also have a slight tanginess. It also has this irresistible creaminess that you’ll adore.
What we love about this dessert is the experience of each bite. You’ll love the bursts of juicy and sweet blueberries in your mouth.
Sounds like something from a pastry shop, right?
The best part? You can easily make this in your home.
