Running a household can be a pretty thankless task. Not only do you have to make a meal plan for the week, you also have to go grocery shopping and cook everything so that it all turns out correctly. Still, no matter how well we plan out our eating habits, we often end up wasting at least a little bit of food in the process. In particular, if we forget to make enough sandwiches or toast, we can end up with stale bread that it seems like we have to throw out.
Fortunately, we have a great way for you to repurpose any stale bread you may have lying around in a way that tastes great and produces no waste at all. That’s right, we’re making a delicious blueberry French toast casserole that is sure to satisfy any sweet tooth. It’s incredibly easy to put everything together and the result is sure to be one of your new favorite things to have for breakfast. So what are we waiting for? Let’s get into it.
Here’s what you’ll need:
- 6 to 8 slices of whole-wheat or white bread
- 1 cup of blueberries (fresh or frozen)
- 4 eggs
- 1 1/4 cups of milk
- 1/4 cup of brown sugar
- 1/4 teaspoon of salt
- 1 teaspoon of vanilla extract
- 1 teaspoon of cinnamon
Here’s what you do:
1. Before starting off, preheat your oven to 400 degrees. When that’s done, break out your bread and start breaking it up into little bite-sized pieces.
2. Next, get a square casserole dish roughly eight by eight inches and line the bottom of it with your pieces of bread. Add your blueberries on top as well.
3. After that, pull out a side bowl and throw in your eggs, milk, salt, vanilla and two tablespoons of your brown sugar. Use a fork to whisk everything together well before pouring the mixture over your bread.
4. Use a spoon or a fork to carefully stir everything together in the casserole dish as well before adding the rest of your brown sugar and your cinnamon on top of everything. When the oven is ready, throw the dish in and let it bake for 35 minutes.
5. When the time is up, take your dish out and let it cool off for a minute. If you followed the instructions, your French toast casserole should be soft and creamy and delicious! Enjoy!
As you can see, this recipe couldn’t be easier to make and it will save you from wasting any old bread you may have lying around. When it’s finally finished, you won’t be able to tell the difference in the final product. Although this version of the recipe is designed to be made with blueberries, feel free to add your own twist to it by switching out for blackberries or by simply adding more fruit.
Although the final result is sweet and delicious enough on it’s own, we won’t tell anyone if you want to serve this with whipped cream and extra maple syrup as well.
