This Beer Flavored Queso Is Perfect For Summer Parties

One of the best things that comes with summertime is all the backyard cookouts we get to attend with our friends and family. Though it’s always great to take advantage of the sunshine (and hopefully a pool if your friends have one), a big part of these get togethers is the delicious food that everyone gets to share. While we’re all used to eating the typical burgers and hot dogs that come with these backyard cookouts, today we have a snack-style recipe that you might have never tried before.

Although we’ve all had chips and dip, we’re guessing you may not have ever tried this beer cheese sauce which is a fun twist on your standard chips and queso. Even if it sounds a little unusual, the tastes work perfectly together and it couldn’t be easier to make. If you’re looking for a delicious snack to bring to your next party that will also impress the guests, look no further than this one. So let’s get started.

Here’s what you’ll need:

  • 1 12-ounce can of light beer
  • 8 ounces of cream cheese
  • 4 cups of shredded Mexican cheese
  • 1 14.5-ounce can of Rotel tomatoes

Here’s what you do:

1. To get started, put a small saucepan over medium heat and pour your beer into it. Bring the beer up to a boil—if it begins to foam throughout this process this is ok as well. While you wait for it to boil, cut your cream cheese up into one-inch chunks as well.

2. When the beer hits a boil, add your cream cheese in and start whisking it all together until everything melts and fully combines. After that, you can add your shredded cheese in about half a cup at a time, continually stirring to make sure it all melts together. Keep doing this until the dip turns the consistency you want, typically somewhere between three and four cups.

3. After the cheese has melted, add your Rotel tomatoes as well and give it all another stir to fully incorporate everything. When you’re done, pour the cheese sauce into another bowl or container and serve with some tortilla chips!

As you can see, the process of making this dip is incredibly straightforward and only requires one extra step to the normal preparation of queso. Because the beer gets cooked first in a saucepan, all of the alcohol cooks off, leaving only the complex flavors behind and fused with the cheese. When you serve everything together, it may also help to heat up your tortilla chips in the oven as well so that everything is the same temperature.

While the dip is delicious when prepared according to the instructions above, you can also make your own tweaks as well. If you like a spicier cheese dip, you could also add in some finely chopped jalapeños as well for some kick.
